Oops, I did it again...

But I'm not Brittany, so I didn't do anything wild, or dance in the nude or anything. The son has his appetite back again...it's sort of hot and cold, but yesterday and today he was ravenous. Last night I made the lasagna he asked for, salad, garlic bread...today he said wouldn't chicken and dumplings be good? Oh, dear...I was hoping for an easier meal, but I plastered that smile on and got it together. He is polishing off his 2nd plate of chicken and dumplings, mashed potatoes (another request) corn, and salad. I cannot for the life of me make a small batch of dumplings. I know better, every time I try, a small batch flops and a bigger one is just fine. No extra hungry people here tonight, so I took Dale and Pete a plate. They love homemade food. Most of the time I can gear it down to serve 2-3, but not on dumplings. Hungry? Come and get it! Do you have a dish you make too much of? This one is my downfall. Tastes delicious, but just...too many dumplings!

I am glad your son has his appetite back, I cannot make a small lasagna, I always need to make a big pan, at least 8 portions.

@MarieCoyle - I divide in individual portions and freeze, it's one of the dishes that freezes well.

I make a fairly large pan, too. It freezes so well and we enjoy it on nights when things are crazy.

@LadyDuck It's always good to have homemade meals in the freezer around here, we are never sure some days just how long son's treatments, etc. will be, it helps us a lot.

I wish you did, I would gladly share. Son has enough for another large meal, I took my elderly neighbors each a plate. Pete said he would eat his tomorrow, Dale looked at it all and said he would have to have a little plate of them now, and save the rest for tomorrow!

Any kind of full size recipe like lasagna or enchiladas makes way too much for 1 or 2 people.

Yes, it does for us as well. I plan lasagna for one meal, and one leftover meal. The rest, I cut into servings and freeze separately, it does so well for days when we come home ready for dinner and are just too tired after son's appointments, treatments, and such, to cook a new meal. I do that with casseroles and soups as well. It just helps us a lot.

I'm glad your son was hungry and ate two servings of your delicious chicken and dumplings. For me, it's chili. I start out browning the meat, but then as I add the ingredients the pot gets full quickly and I end up having enough chili for a week. Sometimes two to three bowls per serving. As much as I love chili, I don't want to eat it for a week. No, I don't have room in my freezer.

Dumplings are delicious. I'm glad your son has an appetite. I always used to make triple batches of everything. Sometimes I would be able to put some in the freezer before my husband attacked them. Have a good week.

He likes the really fluffy dumplings, so that's what I generally make. That's one meal that rarely makes it to the freezer around here! I hope you are OK and get to see your husband soon.

Our large batch stuff includes spaghetti sauce, lasagna, enchiladas, tortilla soup (any soup, really), kugel, curries. These days I welcome "too much" because it can go to my mom as I cook for her when I can. I really need to make dumplings - I don't think I ever have!!

@MarieCoyle The thing with me is I overload the freezers with the deals I get on meats and such. And then I don't have room for the made ahead meals . Do you have those big separate freezers? We have 2 fridges - and I use the freezers on the bottom, but it's not a lot of freezer room.

@much2say I have a smaller extra refrigerator in the garage, and a separate freezer out there as well. I know what you mean, mine get really full in the summers with frozen vegetables I put in there fromm our garden, too.

I do the spaghetti sauce and lasagna, as well as several other types of casseroles. I chuck packages of cookies in there when I bake, so that they do not get all gobbled up at once, I generally have a coffee cake in the freezer for a time when I might need a quick dessert, too. I love having a freezer and I take full advantage of it.

I always make to much chili and spaghetti sauce when we have spaghetti. Left overs are always good. I love dumplings.

I make extra chili on purpose, and freeze some. It's nice to have when we are in a hurry. I have frozen spaghetti sauce as well. We do eat our leftovers here!

I would be there in a minute if I lived next door, At least your son could enjoy them, It all sounds delicious not matter how much you made, I used to not pay attention to portions and would always cook as if I was cooking for an army, Then finally I learned to consider portions and how much to cook. There are plenty of dishes you just have to cook a lot of or it is not worth it.

I would have shared with you, but it's just too far! Darn! Dale and Pete both told me today that they really enjoyed the chicken and dumplings, so that made it worth while. They love homemade meals, too.

Yes, sometimes when he is feeling really sick, he doesn't want to eat. So it is nice to know he is hungry and enjoys his food.
