Simple yet healthy dinner

I always make sure to cook my meals at home to save some money and have control over what I eat. However, sometimes I feel too tired to prepare anything, given that I get tired quite quickly. On top of that, I spend most of my time alone. However, I do not have any other option but to cook meals so that I can save some money for my dad's dialysis. To save time and energy, I usually cook in large batches and reheat them on the following days. All I need to do is cook some brown or black rice to go along with it. For tonight's dinner, I made a bowl of salad and added some apple cider vinegar for the dressing. I plan to have the leftover salad for lunch tomorrow.

I also prefer to cook at home, it's cheaper and you know what you use.
