I have a lot of cookies recipes as I love to make a cookies. Unfortunately, my recipes mostly in Malay and I just don't have much time to translate it here. Here some of the recipes in english for you to try out; Cocoa Cappuccino Cookies Ingredients: 1/3 c. butter, softened 1 c. packed brown sugar 2/3 c. unsweetened cocoa powder 1 Tbsp. instant coffee granules 1 tsp. baking soda 1 tsp. ground cinnamon 2 large egg whites 1/3 c. vanilla yogurt 1 1/2 c. all-purpose flour 1/4 c. granulated sugar Preheat oven to 350 F. Beat butter in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds. Add the brown sugar, cocoa powder, coffee granules, baking soda, and cinnamon. Beat until combined, scraping sides of the bowl occasionally. Beat in egg whites and yogurt until combined. Beat in as much of the flour as you can with the mixer. Stir in remaining flour with a wooden spoon. Place granulated sugar in a small bowl. Drop dough by heaping teaspoons into sugar and roll into balls. Roll again in sugar. Place balls 2 inches apart on an ungreased cookie sheet. Bake for 8 to 10 minutes or until edges are firm. Transfer cookies to wire racks and cool. Molasses Cookies Ingredients: 2 ¼ c. all-purpose flour 2 tsp. baking soda ½ tsp. salt 1 ½ tsp. cinnamon 1 ½ tsp. ginger ¾ tsp. ground cloves ¼ tsp. allspice ¾ c. shortening ½ c. dark brown sugar ½ c. granulated sugar 1 large egg 1 tsp. vanilla 1/3 c. molasses Preheat oven to 375 F. In a medium bowl, sift and mix together the flour, baking soda, salt, cinnamon, ginger, cloves, and allspice. Set aside. In a large bowl, cream together the shortening and sugars, until fluffy (about 2 minutes). Add the egg, vanilla, and molasses. Beat until combined, about 30 seconds. Add dry ingredients and mix until just incorporated. Roll dough into small balls, and roll balls in sugar. Place on ungreased cookie sheets, about 2 inches apart. Bake 11-13 minutes, then cool on racks. NOTE: be careful not to overbake! They are done when the centers are still soft and puffy. My lady finger (Hellikonia) Ingredients : 250 g oats 430 g flour 230 g castor sugar (1 cup) 1 1/2 tablespoons cocoa powder 200 g Ghee 125 g butter (I used margarine) milk powder + icing sugar ~ for coating Method : 1. Mix oats, castor sugar, cocoa powder, ghee and butter. 2. Add in flour, little at a time till you get a soft dough. You don't have to use up the whole amount. Can't actually remember how much I used, but it's less than the amount stated above. 3. Take a bit of dough and shape it like a finger. I used a cutter, just to get a more uniformed size. 4. Bake in a preheated oven at 160 C till done. 5. Leave the biscuites to cool then coat with milk powder. No-Bake Honey-Oat Bars Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup sugar 1/4 cup butter or margarine 1/3 cup honey 1/2 teaspoon ground cinnamon 1 cup diced dried fruit and raisin mixture 1 1/2 cups Wheaties® cereal 1 cup quick-cooking oats 1/2 cup sliced almonds Butter square pan, 9 × 9 × 2 inches. Heat sugar, butter, honey and cinnamon to boiling in 3-quart saucepan over medium heat, stirring constantly. Boil 1 minute, stirring constantly; remove from heat. Stir in dried fruit. Stir in remaining ingredients. Press mixture in pan with back of wooden spoon. Cool completely. Cut into 6 rows by 4 rows.
