It is a tad bit chilly outside today, so I'm making CHILI... for the 1st time this fall. How do you make your chili? What do you serve with your chili? Do you ever make it in the summertime, or do you save this type of meal for only cooler months? Do you even like Chili?! Give me your thoughts & advice on Chilly Chili making!

I make chili when, i do I make it with beans, I know that's not the origianl way beut we like the beans. I then make corn bread to go with it and serve it with sour cream and cheese, maybe some green onion if I have them

Oh yum... making it with corn bread sounds so scruptious! I love a good corn bread when it is nice & moist in the middle but cruncy on top! I have never made corn bread myself. Do you make it from scratch or a box? If you use a box, what brand? I think I'll try that next time I make chili. I said before too that sour cream sounds real good too. I have only had it once with sour cream but whenever I make chili myself I never think about using sour cream. I think I will put it on the table tonight at dinner and see if my husband or son will try it. Cheese definitely! I can't wait until dinnertime!!

i love chili. especially cincinnati chili ! my mother will eat it all year long. my preference is fall and winter though. i make a very simple cili soup: 2 large jars of salsa with rinsed black beans. i experiment with chili by changing the beans or mixing them: pinto, kidney, red. i found jarred salsa has most of the ingredients i use in chili, so i use that. salsa has peppers, onions and tomatoes already cooked. i add meat, more onions and a can of tomato soup or tomato sauce. this winter i am going to make white chili. chicken broth, white beans, spinach and garlic.

The white chili sounds real good MOMMASAM... however, my husband & my son hate spinach! Oh well, but it does sound real good to me anyways! What is cincinnati chili?... never heard of it before.

I am afraid I am not much help to you as I buy my chilli sauce alrady made up in a jar. I usualy cook the pasta and then fry some mince beef and oinions. I then put the mince and onions on a plate, put the pasta aroung it and then pour the chilli sauce over it. Well, my husband likes it...I don't!

Hi Alexandria37 - Well, I guess if your husband likes it than that is all that really matters! There are many things that I buy pre-made too. Like spaghetti sauce. I never make my own but I will add stuff to it like spices or meat sometimes too.

I cook my pinto beans in a pressure cooker. Instead of soaking them overnight, I cook them on pressure for ten minutes and then let them sit while I'm doing something else. Then I add a handful of purslane greens, pureed cilantro cubes (which I always have on hand in the freezer, and a chunk of meat and cook them for another 40 minutes on high. When the pressure comes down the second time, I add a can of refried beans and a can of no-beans hot chili. Both of these are far too salty to consume by themselves, but provide just the right amount of seasoning for a who potful of beans. The already made refried beans save me the trouble of making a gravy and thicken up the chili, while the meat sauce seasons it. I let hubby add however much cumin seed, cayenne or whatever he feels like to it at this point. Then I stir in some already cooked and drained hamburger or sausage and cooked peeled tomatillos that I would have prepared the day before. We both like it hot, but hubby likes his REALLY hot, so he just pours more hot sauce over it at the table. Where do I get the purslane? I grow my own, as there isn't any market within 100 miles that sells it.

Wow drannhh! That sounds so good! You really do "make" your chili! I mean, definitely closer to a "from scratch" type recipe than I do and most other people too. You must really spend a lot of time on it. I have never heard of purslane before. What is it? Next time I make chili I think I will take your advice and cook my own beans. I usually just buy the canned already made chili beans from Bush's beans. They are good, but I'm sure it would taste even better to use more fresh ingredients. I am definitely going to try to add more fresh stuff to it next time, like the beans and fresh spices & seasonings instead of using the packet of chili seasoning. Good idea drannhh! that sounds good when I fry the ground hamburger i mix ground sausage with it an instaed of stewed tomatoes I use grape tomatotes an my hubby likes a side of white rice along side his chili now heres the weird part he adds butter an sugar to the rice I never had it before i married him but now hey its good do you like your chili hot like I do or meduem like my hubby an daughter my youngest daughter is like me she likes it spicy she ask why waste your time makeing chili if you make it wimpy

Hi enola1692 - I never thought of putting sausage in my chili, but I'm not much of a sausage person... don't like it much. I like mine spicy too. As you daughter said... why bother! LoL! I like butter on my rice but not usually when I have chili on top. I've never heard of putting sugar in it though. I like sugar on my pancakes and waffles though, with butter too. YUM!

I do put sugar in my sauces anything with tomatoe it takes the acid out of the sauce its pretty good

LoL! Yes NrgDfenZ... the chili I made yesterday turned out real good, but next time I think I will add a few more fresh ingredients and also make it a little spicier. I hadn't made it in awhile so I was hesitant to add too many hot spices to it this time. I'll have it perfected by the end of wintertime!

There's nothing better than a great Chili and a cool Autumn day! I make a very powerful Chili that should be made outdoors and preferrably over a wood fire, in one of those old cast iron cauldrons!

Wow peaceful... your chili MUST be really powerful if you have to make it outdoors! LoL! Is it really spicy? I bet it is fun to cook it outdoors though in a cast iron pot. I am sure it tastes absolutely scruptious! What do you put in your chili when you make it? I love hearing everyone's own special recipes. It is very interesting. There are sooo many different ways and techniques that each person uses to make theirs. I never realized how many there actually were! LoL!

I love chile and make it several different ways. In fact, I just made chili last week. I also make it in the summer. Not very often though. I usually use ground beef, 2 large onions, 2 bell peppers, 2 cans of dark red kidney beans, 2 cans of diced tomatoes, and a chili seasoning packet. Then I just add different spices to taste. Chili is great for sunday football games and I use the left overs for chili - cheese dogs or chili-cheese fries. I sometimes add macaroni to my chili too.

Your chili recipe sounds good barbiegirl13! I like to make a big batch of it when I make it so there are plenty of leftovers. It is great heated back up the next day or two. That is a great idea to use the leftovers for chili cheese dogs and/or chili-fries. I never thought of that! So simple too. My son likes chili-cheese french fries so I might have to buy some french fries for the leftover chili! YUMMY! Thx!

I make my chili with ground beef, onion, kidney beans, diced tomatoes, chili powder, cumin, salt, season salt, oregano, onion powder, and garlic powder. I like to top mine with sour cream and cheddar cheese.

Ohhhh... sour cream & cheese on top sounds delicious! Never really thought about putting sour cream on top of my chili. I think I had it once before but forgot about how good it was. Man... that sure packs on the extra extra calories though! LoL

I love chili, koala! ANd all of the recipes here are good ones, it's just sort of a mish-mash kind of thing, whatever tickles your taste buds. I put coffee in my chili. Yup, coffee. It makes it deeper and richer and enhances the whole thing. And jalapenos. Gotta have jalapenos in chili for sure. I like to eat it with tortilla chips on the side. Yummy. Enjoy your chili, sugar, however you make it!!!

Coffee in your chili?!! Do you put in the grounds or make the coffee and pour some in? How much do you add to it? Very interesting, I must say. I have definitely never ever ever heard of putting coffee in chili! That is a new one for sure! LoL!

I'm sure I'm like most and make it more frequently in the cooler time of the year, but I do make it year round, just not as often when it is hot out. I make mine using a couple cans of kidney beans, hamburger, tomato sauce or paste, onion, garlic, salt,pepper, onion/garlic salt, chili powder, hot sauce.

I don't think I really ever make it in the warmer months... I just don't crave it then. I guess maybe I occasionally make it but I do not remember the last time I did when it was summertime. Your recipe for chili sounds yummy too! I am making mine today, as I said, and I put in two cans of Bush's chili beans (mild), I added one can of organic tri-colored beans today (never done this before), 1 package of McCormick's chili seasoning (low-sodium), 1-2 cans of diced tomatos (low-sodium too), hamburger or ground turkey (today it is hamburger), not sure if I'll add onions today (my son hates them so it depends if I want to hear him complain or not. lol). I love to put shredded cheese on top too (either cheddar or monterey-jack & colby). YUM! I can't wait until dinnertime & it's only 9am!!! I hope I don't eat too much while testing the flavor! LoL!

Well first let me say I do not like Chili. My mother is the one who makes the Chili and I have no idea how she makes it. She usually does cook in the winter months, I think she has made it in the summer months but that is rare. She cooks more in the winter months and we try to do quick and cooler foods in the summer. I was a little chilly this morning taking my sister to the bus stop so I wore a small jacket, I doubt it is chilly out there know but it will be cold before we know it. I am kind of excited, I kind of like it when it is cold. I like the snow, I definitely would rather it be cold than hot! I hope you like your chilly chili!

My wife just made chili on Monday. In the summer we will have it but usually with hot dogs. A lot of the time I will eat chili with hot dogs. Or I will eat it with some shredded cheese on the top of it. My wife makes it a lot during football season because a lot of times my friends will come over to watch a football game and that way we always have something to feed everyone we keep it in the crock pot all day, so if somebody wants some they can just help their selves.

Hi thedaddym - Yes, I guess making chili for a football game get together would be nice & easy for your wife to make. I hate having to serve people and friends just being able to help themselves is the best alternative I guess. My son is allergic to hot dogs. They give him a headache so we do not eat them very often. Same for bologna.

Hi cream97 - I do not put chili on my hot dogs very often. But, every once in awhile I do have a craving for a hot dog with everything on it... like chili, onions, relish, etc. etc. LoL! Oh, and of course cheese... lots & lots of cheese on top of the chili dog! YUMMY! Now you've got me craving a hot dog with chili! lol! BUmmer... all of my hot dogs are frozen in our freezer!

I love eating chili when it's cold outside. I don't usually make it though. I will go over to my mom's house and eat some when she makes it. I have made it a few times but not much. I don't usually eat it during the summer months though. Last year my mom's neighborhood had a block party for Halloween and one of the lady's made some chili and it was wonderful. They are having another block party this year for halloween and I hope she makes that good chili again. Do you have a recipe that you go by to make your chili?

we often make chili in the colder months, while i am not a fan of this for a meal, my hubby and 1 daughter love it. my other daughter and i will have pasta. it has still been warm enough here to not have it yet (high of 74 here today!)

It did get into the 70's here today during the daytime but it was pretty cool this morning. I am sure it will dip back down again tonight. It is supposed to be even cooler with rain tomorrow. YUCK!

I don't eat chili, so obviously I wouldn't make it. Even the roomie doesn't make it because its just as easy for her to open a can as to make a big ol' pot for herself. she does make beef stew and soup because I like and eat those. Something about spicy food doesn't agree with me - ya think its because I'm allergic to peppers?

As you said, it is probably because you are allergic to peppers. I've never actually heard of somebody say they are allergic to peppers before. I love love love mexican food and other spicy foods, although my stomach cannot tolerate them as well as when I was younger. I can't even drink carbonated beverages much anymore because they upset my stomach. Boo hoo! It is probably better if I stay away from them anyway. I'm sure soda is not good for me. Actually, speaking of beef stew... I'm planning on making that later on this week! I will let you know how it turns out.

Last year I actually changed the way I made it and instead of using tomato paste I started using tomato soup. I use a package of chili seasonings and follow the directions but add the tomato soup. I serve it with breadsticks...cheddar cheese on top and chopped onions.....yummy!

That sounds great jillhill! I do not use tomato paste or tomato soup. I actually use cans of diced tomatos instead. It is really good. My son would probably like yours better because he doesn't like chunky tomatos but likes tomato soup and spaghetti sauce, etc. I love putting cheese on top of my chili... it makes it even more sinful! I made my chili last night with white long-grain rice to go with it. It was really good. We do have some leftovers which I will probably have some of for lunch today. I don't think there is enough left for a second dinner for the three of us. I guess i need a bigger crock-pot!

I assume by your saying that it was 24 degrees that you are referring to celsius and not fahrenheit! lol! That would be really chilly! A good day to eat chili too! I'm glad that the weather is so nice for you there in Geelong in Victoria. It is supposed to be colder today with lots & lots of rain, which makes it a great day for me to have some leftover chili from last night!
