Insence is a symbol of prayer reaching up to the LORD. Our prayers are sweet to Him.

The incense represents the prayers of the people to God. Just as when the sacrifices were burned...and the smell rose up as a sweet savor to God. The tabernacle and later the Temple was the way God chose to teach the Israelits how to approach Him in His Holiness.
