A healthy menu for a single person

I live all alone and deciding on a healthy menu for my daily meals is becoming very very difficult. I buy small quantities of vegetables but am not able to finish it in one day and get tired of eating the same item for two or three days. Even though I try to change the taste but even then it becomes boring. Non vegetarian is nowadays out of the question because a quarter kilo of meat lasts me 3/4 days and I dont like keeping it in the freezer for too many days. Any help for me in planning my daily menu?

hi mayka try using fresh veggies in salads raw like celery tomatoes romanine and carrots and chop up a little raw oinion and use your favorite dressing.also sometimes p;utting left over veggies into a tomato based soup with seasonings makes it super special.try incorporating different colored veggies like red onions. red cabbage etec for good health.rice and beans for protein if you do not buy meat also try soy products for more protein too and use different varieties of beans too.Hope this helps as its what I did when c ooking for myself also I used a lot of pasta too.

Getting fresh veggies near my home is a bit difficult. Have to go a long way off to get celery, red onions and red cabbage to the Supermarket. And there they do not give small quantitites and the quantity that I get would be enough to feed my neighbours too! Am trying out some soy products now and yes I go make salads sometimes and sometimes a combination of all leftovers from the refrigerator!

If you cook only 150 gm to 200 gm of vegetables every day and make sabji you can have with chapati and rice. In case you are left with some extra food you can pass on to your servant maid or others in need of it near your house. I know it is boring to cook for only one but there is no escape from it. Once in a while you can order for pizzas and outside food. good day.

I do not have a servant at home so I am the lone person to finish whatever I cook. I dont like to idea of throwing away food. Yes cooking for one is a very boring task and I have no option as of now!!!!

Yes. I know. In fact we find it difficult to cook only for two of us--myself and my wife. Some days we take from mess wherein it works out cheaper. So you can try for a change once in a week.

I kind of know what you mean...it is just me and my husband now...kids grown and moved out. It is hard to cook/bake for just two after 20 years of baking for 4! A few things I have done is things like...buy 1 lb of hamburger meat and form it into patties and freeze 2 patties together. 1 lb makes 4 patties or two meals. Same thing with other meats. Just buy it and freeze for single person. I also cook a large roast...first night we eat it like that, next night we have sliced meat with gravey or on sandwich, the rest, I grind in my food processor and make buritto meat from it. I then, prepare burittos and freeze them individually. WHen I want one.. I take it out, wrap in napkin and nuke it for 45 seconds. Instant but good buritto! Veges are what i have trouble with. GOod grief...a cup of corn or green beans...hardly worth bothering with! But still... I buy frozen so I can take the one cup of them and leave the rest in the freezer for next day or so.

The idea of making patties of the meat is great. May be add some green peas to to. I am wondering why I did not think of it before. Yes when we were a family of 5 I would make patties very often. I have never made burittos so dont know how to make them. May be I should look on the net for the recipe and try it out. Thanks for giving me a new idea.

I have been learning as I go! I have made patties with grated cheese in them and froze them. Burritos are easy. Fry up some burger meat and season it with a package taco seasoning mix. Take large flour tortillas...lay a mound of meat in the center, add grated cheese and spread it out in a rectangle in the center of the tortilla. Take the bottom end of the circle tortilla and fold it up to the end of the meat, just overlapping slightly. Then take one side and fold it over to cover the meat and then just roll the rest on over enclosing the flap of tortilla you just folded over. This way it keeps the meat inside and it doesn't fall out when you eat it. Kind of like it makes a "envelope" out of the tortilla. Then, tightly wrap in saran wrap. and place in freezer. When you want one, take one out, remove the saran wrap and wrap the buritto in a napkin and nuke it for about 1,1/2 minute. This will change depending on the size of your buritto and the power of your nuker-wave. But mine...1,1/2 minute. And you can always put it back in if not hot enough. Then when done...chow down! I made these when the kids were in school and would come home and want a snack (I worked). These were filling, theyloved them and they were easy for them to heat up with not worries of using the stove or making a mess. And just enough to hold them till supper! } Give it a try! I still do these and when My son comes over and sees them...he knows what to do! I enjoy that as I know he is remembering his childhood and I am a part of his memory..and he will one day pass it on to his kids. A 'when I was little, my mom used to....."

I am losing weight at the moment, and a lot of the time I am eating alone as well, so this has meant that I have had to think about the things that I can do whilst on my own and still eat healthily at the same time. I like to make healthy soup in bulk and then I am able to freeze the rest of it to heat up in the next week or so whenever I want some. It's much cheaper to make it in large amounts as you're then able to use it over a longer term rather than making a full meal for yourself every night and having to pay for your food every single day. Fruit and salads are a good idea as they're easy to store in the fridge until you manage to finish them.

I was never fond of freezing foods and reheating them and eating. But now I seem to be left with no option but making good use of my refrigerator. I do boil a lot of stuff and freeze it so that it saves me the time of cooking every day. But have not tried freezing soups.

Hi friend, try to do some alternative menu for your self like veggies soup,veggie salads,pasta, and make some dessert like fruit salads, and if you think you feel bored eating alone go outside with the restaurants eat some healthy food likes seafoods is good for the health.

Getting all the ingredients for a soup or salad is very cumbersome. We do not get very small quantities here and buying too much is such a waste. I do sometimes take food from a restaurant but not very often because I dont like eating outside food too often.

I think it is not good to have freezed food always. It is not my advice for you. Efficient doctors and many articles has proved that freezed food really affects your health. So in my house we people do not used to have the food which is kept in fridge for several days. What about you ?

Yes I know it is not good to always have frozen food. But at the same time I cannot cook just a little amount of food nor do I like throwing away food. And secondly when I come home tired from work it is so much easier just having the ready food from the fridge. It is too tiring cooking after a hard days work in Office.

I have the same problem, recently I saw on TV where salmon and tuna is just so good for you even in the cans so I make it a point to buy a few cans every time I go to the supermarket, I mainly have salmon and this I can have every couple of days which is good and I can have it on toast or make a complete salad with it or I can cook it into a meal, I have trouble keeping salad fresh it is a nuisance not living close to shops.

I do not get tinned stuff near my house. In fact I would have to travel for atleast two hours to the nearest supermarket where I would get tinned food so that is out of the question at all. I am having problems with fresh fruit and fresh vegetables because I do not get it anywhere close to my house. May be buying raw meats and boiling and freezing small quantities would be a good option.

You can always mix your left over. Like left over meat cook it with vegetables! Just try to come up with a great combination. I always do that when I was single and living with my sister since we both don't want to eat same food in every meal, so we try to alternate so nothing will be wasted!

I keep doing all kinds of weird combinations with the left overs in the fridge. Sometimes add some tomato sauce or else a fresh tomato to make a change and make it look like its cooked fresh. My colleagues laugh at me when I tell them of the combinations that I have eaten. That may be because they have not tried anything like this themselves because they have not had the opportunity of being alone.

First of all, just eat meat and veggies. Skip grains, sugars, most carbs not in veggies. You can take leftover veggies and mix them in with other, new ones, stir fry them up and it's whole, new meal. You can mix them in with scrambled eggs in the morning for a nice omelet.

I mix 2/3 left over veggies at times and make a new one out of the concoction. But have not tried mixing the left over with fresh veggies. Should try this out and with a scrambled egg for breakfast is a good idea. May be I will try it out soon.

I dont know where you live. But if you could become something like a paying guest with one of your neighbors your problem will be resolved more easily. You see, they would cook everyday for their families. They would only need to increase the quantities slightly. You can pay them slightly more but think of convenience and health. You would definitely be better off.

I will not be too comfortable with a paying guest accomodation. And besides such accomodation is a bit difficult to get in our city. And whatever is available is just too expensive and beyond my reach.

Get a steamer. I have a 3 tier. I can put meat on the bottom, veggies in the middle and rice on the top tier. You can make the right portions that you know you will eat with no leftovers. At the end of my steaming, I toss the cut up chicken pieces with a spoonful of barbecue sauce and it adds flavor or I use Mrs Dash spices. Once the veggies are steamed I can choose to butter them or if making carrots sometimes will take a couple tablespoons of butter and honey mix in a saucepan and drizzle over the carrots or toss the carrots in the mixture. I love my steamer. Next to the steamer I use my oven. Since you tire of leftovers you can always make a couple pieces of Italian chicken, or barbecue chicken in the oven. you can make a couple of burgers in the oven too. I always mix a pound of hamburger with onion soup mix and make into patties. you would get 4 or 5 from the pound and can wrap individually in freezer til you are ready to eat one. I like soup too so I tend to open a good can of Tomato Parmesean soup and add a grilled cheese sandwich with it. Ok now I am getting hungry LOL

First of all, try to eat cooked meals. If you buy all sorts of semi-prepared food, you will get to realize how unhealthy it is. Try to eat a fruit or two a day, any fruit. You can include in your meals potatoes, rice, some pasta, soia. If you want to eat meat too, you should chose fish or chicken.

I dont like the semi cooked meals available in the market so I do not buy them. I prefer cooking my own food. I do include rice and potatoes in my meals but not much of pasta. I dont get a chance to buy fish because it is not available nearby and have to go a long way to buy nice fresh fish.
