My Vegetarian Lasagna was a success!

Yes, I have done it! I was able to mimic a certain restaurant's Vegetarian Lasagna. The best part was, my family loved it. They said it was great because of the sauce. This is my first time doing this cuisine and I'm very relieved to see that it passed my family's taste buds test. I had to make some alterations since my wife is allergic to garlic and I wasn't able to get any ricotta cheese. How bout you guys? Have you heard/tasted/made a Vegetarian Lasagna already? How was it?

I used to buy a frozen veggie lasagna in las vegas, it was good. But i cant buy it here in mexico. Any way i can get your recipe for it? Merry xmas and happy new years there... :)

From the name itself, it sounds so healthy. I haven't tasted one, but i think i will like it when i have tasted one. Maybe the secret is just a delicious sauce that you pour over the ingredients before baking it.

It tastes just like a regular lasagna but instead of tasting meat, you get to taste the baked zucchini and eggplant. The sauce should be exceptionally delicious else it won't be as good as the internet version. I guess you could say that I cheated a little since the sauce that I used already has parmesan cheese in it. I just sauted onion and tomatoes and then added the sauce.

I have never tried a vegetarian lasagne before but I would definitely give it a try I would be very interested in getting the recipe from you could you PM with it please.I'm not a vegeratian but every so often I will have the vegeratrian option at a restaraunt I find that it makes a nice change every so often. It would make a good meal if I cooked for my mates at I live with at university.Because my friend can't eat beef because he is a Hindu and beef mince is what you usually put in a lasagne.Though I would probably put garlic in it as I think it makes a meal taste a lot nicer and itis very good for you. Garlic is probably the spice I use the most the other ones that I use a lot are Turmeric and Paprika.

Hi anklesmash, you can find the recipe on my reply to bunnystarr. I posted it on her response. I didn't use garlic because my wife is not allowed to eat garlic since she has SLE. Garlic somehow boosts my wife's immune system and that is definitely a no no for my wife since her immune system is attacking her own body.

Wow! Great, I would love to get your recipe for vegetarian lasagna. I haven't yet made a vegetarian lasagna but I sure would love to. What did you use instead of cheese? I think I would fill it up with mushrooms and peppers. The sauce of course always has to be a hit.

Hi Arieles, the recipe is posted on my reply to bunnystarr. Yep, the sauce is what made the recipe delicious. I didn't even use garlic but it was still a success. I think if you use garlic it would be more awesome. I used mozzarella cheese and regular cheddar cheese.

I am not a fan of the vegetarian dishes, but I am always open to tasting dishes that others prepare. I prefer my spaghetti, lasagna, and pasta dishes with meat. It doesn't have to be beef or pork. I love seafood and I would eat pasta prepared with shrimp and a flavorful sauce. I was treated to some vegetarian chili at a restaurant when I went with my daughter and it was absolutely delicious. That is certainly a recipe that I would want to try at home.

Sure! But I have to warn you, the measurements of these ingredients are just based on trial and error method. I really didn't take note of the measurements. I'll try my best to be as precise as possible. Also, this was prepared in a medium rectangular lock and lock container and cooked in a conventional microwave oven. Our place isn't that big and we still need more kitchen stuff. A box of lasagna noodles 4-5 cups of Tomato Sauce 4 small tomatoes half cup chopped onions 1 cup thinly sliced onions(optional) 2 cloves chopped garlic 1 zucchini sliced into thin circles 2 medium eggplants sliced into thin circles 2 cups grated cheddar cheese 2 cups grated mozzarella cheese salt olive oil 1. Cook the lasagna noodles (boil water with 1/2 tablespoon olive oil and a dash of salt then submerge the noodles until they are cooked aldente). 2. For the sauce, saute chopped onions until it turns brown then add chopped tomatoes. After say about a minute, add the tomato sauce and let it simmer for about 10 to 15 minutes or when sauce has already thicken. 3. For the lasagna arrangement, cut 1 lasagna noodle in half and place it in the container. Add the sauce evenly over the noodles. Add 1/2 cup grated cheddar cheese and 1/2 cup grated mozzarella cheese. Make sure the cheese are spread evenly over the sauce. Add the chopped zucchini and eggplant and put in some sliced onions. Repeat this process. On the third layer, just put in the lasagna noodles, sauce, and cheese. 4. Cook in the microwave oven for 4 minutes without the cover. Then cook again for 2 minutes with the cover (at least that's how I did it). Hope it turns out good. :)

I can copy a recipe too for just looking and tasting it, but not so successfully of course, just almost. I accidentally picked up a lasagna box, which means already made and just needed to heat lasagna. I thought it's just the same and not reading thoroughly. And when I was eating it, at first I don't like because I'm not a fan of vegetables, but with every bite it's getting delicious, so in the end it became my favorite.

I guess it was meant for you to find and enjoy a Veggie Lasagna dish hahaha! Veggie Lasagna gives you the satisfaction of the meaty lasagna taste minus the guilt.
