what is the best way to poach fish?

A good friend of mine is preparing for her final exam at a culinary school. One of the foods she was tasked to prepare is poached fish. I know that there different cultures have different ways of doing it so I hope you can share your own cooking experience here. Thanks.

I haven't really tried to poach fish. But I have tried to steam one and it was really delicious. So I' pretty sure poach fish would also taste really good.
