why street foods tastes a lot better?

I often wonder what is it about road side food that home made pakoras,chat or jalebi doesn't taste same as the road side one.I bet even if the same chef is kidnapped and given the same ingredients it won't taste the same. After much research I've reached the conclusion that perhaps the dark,viscous re-used oil and the diesel in the air is what puts street food in a different league from its homemade version. Personally even i cant resist it even after knowing about its past :-P
