I Made Soup Again Today

This is soup weather. So I made a large crockpot full of vegetable beef soup. More vegetables than beef. I probably have at least four quarts in this pot.
I didn't use a recipe. I just dumped. I used about five carrots, two stalks of celery, about a cup of dried mushrooms, a cup of dried cooked lentils, a large onion, about five cloves of garlic, a handful of chopped fresh parsley, about a fourth cup of henbit (an edible weed), some thyme, some oregano, some salt, about two cups of frozen green beans, about half a cup of cooked ground beef crumbled, a can of diced tomatoes, and two quarts of organic beef broth. I have discovered it's as expensive to buy beef bones as to buy the broth already made.
The soup is done, but I'll probably let it sit for a few more hours on low to develop more flavor. Then I'll put part in the fridge and freeze part in individual size containers.
I'm trying to make sure I have some prepared meals, especially soups, in the freezer for those days I don't have time to cook and want something hot and nutritious. Soup is especially important in case one of both of us gets sick and I don't feel up to cooking. Tomorrow I'll have a salad for lunch, and maybe a cup of soup with it.
What is your favorite soup? Do you make it or buy it? Do you ever freeze meals in individual portions in case you need a quick meal? I like having my own frozen foods to heat up that I know are good for me. I now have some baked beans, chicken soup, and vegetable beef soup in the freezer. I also will have about half this batch of soup and a couple more portions of beans in the fridge. In addition I have Hubby's ground beef patties and brown rice cooked for the week. I hope I can concentrate on writing tomorrow instead of cooking.

The soup you made looks and sounds good! Crazy buying he bones which are simply left over cost the same as the broth already prepared. My favorite soup is broccoli and cheddar and I haven’t had it in years and come to think of it I don’t think I’ve ever made it at home.

I'm not supposed to have milk or cheese anymore, though I cheat with my morning cereal and if I go out to eat. I love cheese, and I'm beginning to crave it now that winter is here. I want a grilled cheese sandwich with my baked beans, but I'm not supposed to have whole grain bread anymore, either. I'm supposed to try to be gluten-free for the sake of losing weight and improving my digestion.

That's what I've been doing with my crockpot meals now. It's more practical than eating a full three or four quarts of a crockpot meal in the week after you made it. Much better to save half in the freezer and pull it out when you are hungry for it again.

I agree, its good to have food ready to eat, that we make. Yes I have home canned my own soups and meats, all ready to just be heated.

I'm going to do more of that. Otherwise, if there is nothing healthy that's easy to heat up, I wind up eating things that aren't really good for me.

I am married to my crockpot! My favorite soups are wedding soup and pizza soup. The crockpot handles all of the stress while I work.

I like that pot which looks more inviting than the soup Soup is not a staple diet in our household but my choice is for sweet corn and crab or chicken soup.

I like all kinds of soups. Just sometimes it is hard to make them just for myself. I love vegetable, chicken, tomato and split pea soups just to name a few.

It's more practical to make them for yourself if you freeze the leftovers in individual portions. It tastes better than canned and you can have it when you're hungry for it without having to cook it again. Of course that only works if you have a freezer to store them in.

I wish I'd had more made when we came down with the flu in December, but at least I had some. What I like about freezing the soup is that I can have more than one kind on hand and not have to eat one batch until we finish it.
