This Pandemic is Making Me Cook Again

Crockpot of Soup

Normally I would spend a good part of my day writing or networking. But I spent yesterday cooking and catching up on important laundry. I made a crockpot of vegetable soup to freeze in individual portions in case one of us gets sick. Cooking is not something you want to do when you are sick. The most nutritious soups are the ones you make yourself. I started with chicken broth and then picked several chard leaves from a volunteer plant growing in my lawn.I chopped them fine and sauteed them. Then I cooked some onions and garlic the same way. I added all to the broth along with half a package or French-cut green beans from the freezed and a can of diced tomatoes. The crockpot took care of the rest. In the last hour I added a lot of thyme. It was delicious. Are you doing any more cooking than usual now that you are at home more?

@bagarad I see in the picture the soup in the crockpot. You are right no one wants to cook when they are sick. Good idea to make the soup for when you do get sick. I am not making the usual and not really more because of the virus.

I cheated and had a bowl of that soup last night. I had a sore throat and I knew that soup would make it feel better. I'm not sick, but I've been reading things aloud to my husband and it makes me hoarse.

@bagarad It is all very hard. I have been very stressed. I hope the soup helped you out.

@Hannihar I froze most of it to save until we really need it.

I wish I could say the same for us. I eat more when I'm around the food more.

@bagarad I know whar you mean. I cannot keep a food journal as the journal makes me think of food even more.

I believe in being as ready as I can for anything. Everyday cooking and eating hasn't changed, except I try to get more variety in my diet now instead of mostly eating the same thing every day.

Nothing has changed much for us except that some events we'd planned to go to have been cancelled.

I'd rather be reading than working, but sometime self-preservation instincts kick in.

@Moon24 We have the time, but don't always use it that way.

@bagarad You are right. At least we have enough time to cook now.

I am doing more cooking, definitely. I went over to my dad's today, and his wife had made a nice stew. I don't think she has stopped cooking for like a week.

I had forgotten how good my own cooking tastes. I'd make some chili, but I don't have any beef.

We like to cook our own foods because we are so fussy. Also, we find if nice to have large amounts of soups, salads, etc. ready so there does not have to be a big amount of prepping for meals. It doesn't just make it easier, it allows us to be lazy

I agree. Hubby likes a hard-boiled egg with his breakfast every morning. So I cook a dozen at once every time he runs out.
