Super Belated June Recipe report card

Mylotter friends, as promised, it’s better real late than never to show you June's recipe report card. Both July and August's recipe lists would be combined in one super post real soon. Two for the price of one. So sorry about this. 1. Strawberry Spinach Salad with Grilled Chicken-A+. This is a delicious and scrumptious salad to make on a hot or warm night. I loved the grilled chicken in this delicious and light summer salad. Very easy to whip together in so little time. No leftovers. 2. Summertime Spaghetti with Fresh Tomato Sauce-A-. Since I didn’t have tomato sauce on hand, I used ketchup for a substitute. It worked well in a pinch. I loved the freshness of the tomatoes and the veggies to use for the spaghetti. Very flavorful. No leftovers. 3. Creamy Vegan Tomato Pasta with Fresh Herbs-A+. I also loved this vegan pasta dish with fresh herbs and a scrumptious sauce to go with it. A simple dish that tasted so well and came out so good in little time. No leftovers. 4. Creamy Vegan Mushroom Pasta–A+. This was another great simple vegan pasta dish that has the same yummy pecan sauce and topped with mushrooms. It came out so good and was so filling too. No leftovers. 5. Healthy Bruschetta Chicken-A+. I loved this meal and the combination of a bruschetta on chicken. It packed a powerful punch with so much flavor. Delicious and nutritious as well. No leftovers. 6. Citrus Shrimp Avocado Salad-A-. This was a delicious and versatile summery salad to make on a weekend night. The only cooking required was to saute the shrimp and toss the ingredients together into a bowl. I loved the citrus coating from the orange juice too. No leftovers. 7. Turkey Teriyaki Burgers with Grilled Pineapple-A. Like all turkey burgers in the past, this one crumbled after I flipped it over. Nonetheless, I loved the grilled pineapple rings to top the burgers when it was done. I’ve made enough for two burgers however and had no leftovers in the end. Very scrumptious and appetizing. 8. Sweet Potato Taco Bowl-A-. This was a unique meal with all the components of a taco in one bowl. It was so flavorful and not too spicy with the sweet potato added to it. I would make this again somewhere down the road. Leftovers were pretty good. 9. Vegetarian Paella–Incomplete. I didn’t get a chance to make this since I didn’t have tomato paste or the right rice. So this recipe would be bumped over to September’s recipe list. 10. Stuffed Greek Turkey Burgers-A+. These turkey burgers came out pretty good with the feta and the spinach stuffed inside the patties. These did crumble as well, but it was pretty good to devour for a juicy turkey burger. Leftovers were pretty good too. That’s a wrap for this super belated mid-June recipe report card. Better late than never, right? I’ll post my September recipe list sometime during this weekend after work. Stay tuned. I’ll check back in tomorrow with posts and comments.
