Leftover potatoes....now what?

What do you do when you have leftover potatoes from dinner?
I mean like mashed,fried,boiled,baked potatoes.....pretty much any way you can fix them.
I hate throwing them out.....but nobody wants to eat them when they have been reheated.
So this is where I need your help!!!If you have any good recipies or even ideas on how to dress up leftover potatoes....would you please share with me?
It doesn't have to be anything fancy.....it just has to make them more appealing to the guys I have to feed.

Well, I have three suggestions although you might consider one of them rather odd...
Baked potatoes - If you have leftover baked potatoes, you could always give them new life by making twice-baked potatoes. Simply cut the potatoes in half and scoop out most of the potatoe from the skin. Mash up the scooped out portion and mix it with some butter, a little milk, and some cheese. You can get really creative and mix in a little broccoli, bacon bits, etc. if you'd like. Then stuff the potatoe skins with this mixture and bake again in the oven until the tops are all crusty and brown.
Mashed potatoes - The next morning, you can make mashed potatoe patties instead of hash browns to go with breakfast. Just form the mashed potatoes into patties and dredge them lightly in flour. Pop in them in a hot, skillet with a little butter and fry them up until a golden brown on each side.
Mashed potatoes - OK, this is the one that might sound a little odd, but they are actually quite tasty and a local favorite here on the border. Take a corn tortilla and spread some mashed potatoes on it. Fold it in half and fry until golden brown on both sides. Serve with a bit of sour cream and guacamole - Presto! Mashed potatoe taquitos!

My mom used to make us these mashed potato "pancakes". I LOVE them, the brownier/crispier, the better!
Mashed Potato Pancakes
Leftover mashed potatos
shredded cheese (whichever kind you like)
Dice meat if you like too
1 egg, or 2 depending on how much you are making
salt
black pepper
oil or butter
Instructions
Add the cheese, eggs, salt and pepper to taste to the potatoes. Stir to blend with a wooden spoon. With wet hands, form the potatoes into patties about 3 inches wide and 1/2-inch thick. Rinse your hands frequently to prevent sticking.
Heat a large nonstick griddle or skillet over medium heat until hot enough to sizzle a drop of water. Add the oil or butter (ideally, a bit of both to prevent butter from burning). When hot, add the patties, without crowding skillet, and cook until golden brown and crisp on the bottoms. Turn and brown other sides. Repeat with remaining patties, adding more oil as needed.

i fry any type of leftover potatoes. doesn't matter if mashed or cut up in pieces. i like them fried they are really good. through some oil in a pan and put the potatoes in, add some salt and pepper and they are dilicious. if they are cut up in pieces my daughter likes to dip them in ketchup after they are fried.

If you have leftover potatoes then add same quantity of all purpose flour some salt and 1 tea spoon of bakin soda for every cup of flour and 1 egg for every 1-1.5 cup of flower . Mix them well. If they are very thin then add some bread crums and bake for 25-30 munutes at 375F.

How about some cassroles.
Mashed Potato Beef Casserole
Cook up this delicious casserole with ground beef and fluffy mashed potatoes.
Prep time: About 1 hour 20 minutes
Baking time: 25 to 30 minutes
You Will Need
2 bacon strips, diced
1 pound ground beef
1 large onion, finely chopped
1/4 pound fresh mushrooms, sliced
1 large carrot, finely chopped
1 celery rib, finely chopped
3 tablespoons all-purpose flour
1 cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried tarragon
1/4 teaspoon pepper
3 cups mashed potatoes
3/4 cup shredded cheddar cheese, divided
Paprika
What to Do
1. Heat oven to 350°F. Grease a 2-quart baking dish; set aside.
2. Cook bacon in a skillet until crisp; drain, reserving 1 teaspoon drippings. Set bacon aside.
3. Cook beef in drippings over medium heat, breaking up meat with the back of a wooden spoon, until no longer pink; drain. Toss onion, mushrooms, carrot and celery in flour; add to skillet with the broth, Worcestershire sauce, tarragon and pepper. Bring to a boil; reduce heat to medium-low. Simmer, uncovered, 15 to 20 minutes or until vegetables are tender.
4. Add bacon; spread evenly in prepared baking dish. Combine potatoes and 1/2 cup cheese; spread over beef mixture. Sprinkle with paprika and remaining 1/4 cup cheese. Bake, uncovered, 20 to 25 minutes or until heated through. Broil 4 inches from heat 5 minutes or until bubbly.
Mashed Potato Casserole
3 cups stiff mashed potatoes
1 teaspoon chopped chives
1 teaspoon bacon bits
1 ounce cream cheese, softened
Dash of pepper
Dash of garlic powder
Parmesan cheese to taste
Paprika
1 tablespoon melted margarine or butter
Preheat oven to 350°F.
Mix all ingredients except Parmesan and paprika and blend until smooth. Place in greased casserole and sprinkle with Parmesan cheese and paprika. Drizzle lightly with melted margarine.
Bake in preheated 350° F oven for 30 minutes or until lightly browned.

When I have some mashed potatoes left over, I mean like half a mixing bowl's worth, I either make mashed potato soup or potato pancakes. To make mashed potato soup, all you have to do is make the potatos real thin and runny by adding milk, then add chopped up ham and some chopped onion and a pinch of sugar, put it in a soup pan and let boil till onions and ham are tender and the mixture gets a little thicker, tastes great! Now on to the potato pancakes: I just add some pancake mix, some milk, chopped onions, an egg, some onion powder, salt, pepper and a tablespoon of sugar. stir into a thick pancake like batter and pour into a well oiled pan like you would do regular pancakes, let fry till both sides are crispy, (center will be soft) and serve. Boy are they ever good!

Potatoe Fries is a defenite waste after the meal no one will eat this when reheated, but bake,mashed or boiled is a good one to keep for the next use on meal. but dont let it spoil.

leftover mashed potato can be made into potato soup like boiling it with enough water then add cubed ham or bacon bits , sliced celery stalks , little evaporated milk then season with pepper , salt and parmesan cheese.
the boiled or baked potato can be sauteed in a little olive oil with garlic then add into the steam brocolli and caulifower as a very healthy side dish with breaded pork chop of baked chicken with cheese.
fried potatoes can be added into our pork casserole in tomato sauce or into the baked chicken mushroom bowl as toppings.

There has been a number of times when the boiled potatoes are left after making the dinner.I add spices to them and mash them properly so as to make them tasty and spicy.Then I use this mixture in the sandwiches for the filling or make cutlets out of them.And believe me the sandwich tastes so good.My fionce loves when I prepare that sandwich.Well I would also like to share that I add salt,red chilli powder,a little turmeric powder,lemon sqeeze and a little sugar according to our taste to the mashed potatoes.Just try that out.

It seems all of my ideas have been mentioned here except one. Place the pmashed potatoes in a freezer bag after they cool and freeze. The next time you make a stew or soup add the potatoes as a thinckening agent. I do this and it works great.

My mom used to mash the left over potatoes. She would put them in small aluminum holders (like little pie plates) and sprinkle them with paprika and bake them in the oven so they would become crisp on top. They were absolutely delicious. You can also mash the potatoes and use them as a topping for meatloaf. There's always home fries too.

Hi winky. I have a couple of tasty ideas for left over potatoes.
1) Cold Potato n Egg Salad, In a salad bowl, dice up potatoes add a little mayonaise, chopped parsley and boiled eggs sliced, salt n pepper. Mix it, but dont mush it.
2) Potato Omelets, In a bowl, Beat 6 to 8 eggs, add a little milk, dice up some onion, add thinnly sliced potatoes, and chopped parsley (optional)fry as you would an omelet in any oil.
3) Potato n Beef mince Bake, Fry enough mince, onion and garlic to cover the bottom of a medium sized non stick baking dish, cover the bottom of the baking dish evenly with sliced cold potatoes, spread the cooked mince over the potatos like a layer, layer more potatoes on the mince if any left and grate enough cheese to cover the lot, for garnish: slice 1 tomato and layer them on cheese, along with some chopped parsley. Salt n pepper (optional), Bake in the oven at 180 celsius, for 25 to 30 minutes. These recipes are from me experimenting with leftovers. They are nice and you dont waste anything. Leftover fried potatoes are good with scrambled eggs over them.
Saute some onions and maybe some type of meat, add any kind of veggie, then when that is soft, add the fried potatoes and when they are warm pour scrambled egg mixture over and let cook then stir to distribute.
This is really good. I make this at least once a week to use up leftover fried potatoes.

we really dont eat that much bu ti have a good idea for left overs especiall mashed potatoes..why not mixing it with and spices and cooked it like an omelette..it sounds delicious to me..

What my grandfather used to do was chop one onion up; mash the potatoes if not mashed already; add a little flour and then with everything mixed together he would make potatoe cakes. :) :) I can still taste them. It is just like pancakes but made with potatoes.

I dont waste anything. What i do with left over potatoes depends on the amount left and what form we had them in whether it be boiled baked or mash. Some of the things i do if there is enough for another meal is a hash,or cut up and fried, potatoe pie if mashed, and if there is only a little soups or stews additives. Or if only small amounts do them up in lunches for students or yourself for work the possibilities are endless with potatoes. lol

Did you know that KFC uses white pepper in their mashed potatoes? I think they're yummy! We never have leftovers from them either, lol.

What my mum used to do, and what I now do is we put them in the bottom of a baking dish, Boil some pasta, drain it and add your sauce of choice eg, bolognese sauce. When that is done, pour the pasta on top of the potatoes and cook in an oven for roughly 30 mins at 220C. Tastes great :P
