Looking for some cajun recipes

I like lots of spicy foods, and would like to find some more cajun recipes to try.
I have tried and know I like a lot of various cajun foods that I have gotten at restaurants. Let me check out and try some new variations.
I have made jambalaya before, but would love to see other versions of that too.

BrotherTuck, I love Creole/Cajun foods and usually do a dish at least once a week. One of my favorites is Cajun Shrimp.
I take 1-2 pounds of medium prawns (shells on) and put them in a Zip-Loc bag. I pour olive oil, coarse black pepper, Spanish paprika, Tony Chacheres creole seasoning, and a pinch of sea salt. I let that marinate in the refrigerator overnight.
When ready to cook, I heat a large saute pan until it reaches medium high, lowering the heat to medium, I add a cube of butter, and a splash of olive oil until it's sizzling.
Drain off the marinade and toss the shrimp into the hot butter and stir rapidly to coat. I throw in a handful of dried organic chives, and continue cooking until the shrimp are pink and tender. add a tablespoonful of creole seasoning, cook another minute. Serve this with white rice and a big salad. It's delicious!

I like shrimp and enjoy the spices, so I'll have to give it a try. I haven't used Tony Chacheres seasons but have seen and heard of them and heard good comments about it. Thanks for the post.
