Oatmeal Buttermilk Waffles

1 cup all-purpose flour
1/4 cup white ir yellow cornmeal
1 cup uncooked rolled oats
2 tablespoon baking powder
1/2 baking soda
1/2 teaspoon salt
3 eggs
2 cups buttermilk
1/2 cup bacon drippings or melted shortening
In large bowl, stir together flour, cornmeal, oats, baking powder, baking soda and salt.
In separate bowl mix together eggs and buttermilk with fork. Pour over dry ingredients.
Add bacon drippings or shortening and stir until dry ingredients are moistened.
Pour some of the mixture into preheated waffle iron until about 2/3 full. Bake until golden and crisp, about 4 minutes. Repeat with remaining batter. Serve immediately.
makes 4 to 6 waffles
good served with maple of fruit syrup, whipped butter, bacon, fresh fruit and coffee.

I do not know how I missed this recipe before, it sounds like my kind of recipe, healthy and yummy. We use maple syrup a lot at our house. I like the mixed grains in the batter.
