Cheese Ptato Casserole

I found this recipe online and tried it. It tastes great so I thought I would share it.
This feeds 8 people
Ingredients:
7 medium potatoes, about 2lbs.
1/2 cup butter or margarine
1 small onion chopped (I left this out)
1 tspn salt
1/2 tspn pepper
8 oz of sour cream
1 can of cream of chicken soup
8 oz of shredded cheddar cheese
3 tablespoons of butter or margarine melted
1 1/2 cup herb-seasoned stuffing mix
Directions:
Cook potatoes in boiling water to cover 30 minutes or until tender. Drain. Let cool to touch. Peel and cut into 1/4" strips. Set aside. Then combine 1/4 cup margarine or butter and next 5 ingredients in large bowl. Gently stir in potatoes and cheese. Spoon into a lightly greased baking dish, 13x9x2. Combine 3 tbsp butter or margarine and stuffing mix. Sprinkle over potatoe mixture. Bake uncovered at 350F for 25 minutes or until thoroughly heated.

This sounds wonderful. I will have to make this casserole this weekend to go with something on the grill.
