If you have an onion saute it in olive oil when tender add your tomatoes.You could chop them in the blender first if desired. Let this mixture simmer while you brown your chicken thighs in olive oil.When browned put a layer of the tomatoes in the bottom of 9x13 in pan. lay the thighs in on top. pour the rest of the tomato sauce on top.bake covered for about 40 minutes at 375 degrees. while thighs are baking cook your rice. Serve the chicken and sauce over the rice.have the mixed veggies on the side and forget about the mushrooms.
