For Mother's Day (here it's May 13th)my family and I are doing a big potluck so we can share the load. Does anyone have any simple ideas for me to make up and take with me? I was thinking some sort of tasty pasta salad or some kind of ham dish... but I'm open to anything! Thanks in advance!!

Hi Sunup! I have a good recipe for you. It is easy and tasty. You can do it with scraps of bacon, ham, hotdogs or some shreded boiled chicken, or even bits of fried crispy chicken. It will give it a contrast. So this is a macaroni salad. You can use cooked macaroni, or shelled macaroni. Set them aside in a strained so they'll be less water. so they won't spoiled easily. Cut some thin or in dice carrots, celery, cheese, and pineaples. They taste better when not too big or not too small. Mixed up your macaroni, vegetables, ham or chicken etc.. (depending on your choice), and add some mayonnaise. The more the mayonaise the better, it will be more creamy. But not too much not to overpower the content. Add pineaples and cheese on top. Or you can also present it over a platter of lettuce. You can served it chill too.
The good side with this recipe, you can also make it sweet. Instead of mayonaise, use some all purpose cream and condense milk. Pineaples, sweet or smoked ham, dry raisins are a best match if you want a sweet macaroni salad.
Hope you'll like these recipes. Advance Happy Mother's Day! Have a great day my friend! More blessings!! (^^,)
