How do you decide what to have for dinner?

I have 4 children, one doesn't live here. On the weekends, I am always asking my kids what their plans are for the evenings so I can determine if they will be home for dinner or out with friends. We always have dinner together during the week, so I give them some freedom on the weekends to be with their friends. I usually get the typical....I might be home, but dont count on it. OR If I come home, I will be bringing ( friends name) with me for dinner. And I also get my son who doesn't live her sometimes stopping for dinner. I can never decide what to have on the weekends. I could be cooking for anywhere from 3-8 people. Tonight I went and bought stuff for make your own subs and soup. I love my kids and their friends to be here for dinner, so I want to have enough, but I don't like haveing so much when it is only 3 of us. Any suggestions on meals that can be stretched?

dinner isn't formal at all at my house. noone eats at the same time so mostly it's a fend for yourself type thing. i just make whatever i can with what we've got in the house.

That seems to be how it is around here on the weekends. I ended up getting sub stuff and making soup and the kids decided they wanted grill cheese sandwiches! I can't win. During the week I always make nice dinners so don't really have to worry about the weekend meals.

it has been on the stove since early this morning. It is all day Italian Tomoto sause. With pork in it. Yummy, we will freeze it for the rest of the year to have monthly!

I love homemade tomato sauce. I make it every other week and only have enough left over for the following week. It is a great meal!! thanks .

I have been a stay at home dad for the past 9 years and this is one of the major things I have struggled with. I am not a great food lover so I really find it difficult to come up with any kind of meal plan. I recently bought a slow cooker and a whole slew of recipe books and that has really helped. If we have a bunch of chicken in the freezer then I'll search for a recipe for that. Some of the meals are pretty hit and miss but it's fun making them and the family really appreciates the effort.

That is great that you are the main cook. I like to make different dishes with chicken also. The only problem with that is I get the 'chicken again' comment from the kids!
