its much popular because chicken is safer than pork and beef. i can even make congee on chicken bones broth.

Hi Samson! "Congee", is like a rice porridge. It is very popular here in the Philippines. You can saute some garlic with the meat scraps, like chicken or pork, or even tripes and chicken bones too. You add some water to it. And let it boil. When the water starts boiling, add 1 or 2 cups (which will depends on your desire thickness for the porridge or amount needed) of already washed uncooked rice. Lessen the fire and let it cook with continuous stirring. So the rice won't get burned at the bottom of the pan. Add salt and pepper. And you can also add fresh onions leaves, mushrooms, roasted garlic or crispy chicken skins as toppings. A squeeze of lemon or a dash of soy sauce and vinegar, can add spice to this meal. Serve while hot. But beware it is too hot for children alone to handle. And this an very good alternative for persons who are sick and not able to eat much or chew, or have no appetite. ya its a truth,as most of people eat chicken dryor roasted,which transfers the fat and salt in the chicken flesh,drains as oil and dets deposited in the skin and bones,that makes it tastier.people who eat less spicy food are introduced to a sudden spicy taste that theyll love for sure.
its only this fat and salt of its body that gives the taste and smell to the chicken.
have you ever eaten boiled chicken as such without any gravy or so.youll find no taste in the flesh but only in the bones.but people usually avoid eatind skin or bones minding their table manners,thats why its mostly confined as a trend among children.

I will agree that the chicken skin is pretty flavorful. I don't usually eat it, though, because of the high fat content. I will sometimes use the bones and bits of left over chicken to make a broth. Add some carrots, celery and onions to a pot full of water and bones, YUMMY! :)

I normally will use chicken bones to flavor soups and stews. There is a lot of flavor in the bones. However, we don't eat the chicken skin do to the fat content. When chicken is cooked correctly it is a very lean full of flavor kind of meat.

Even I dont use the skins though it tastes superb. I have to pay for skins also while buying the whole chicken.

No. I dont agree that the bone and skins are tastier than the meat. In fact, we cannot eat too much of the skin. It can cause to have bad cholesterol. Beside, why do you think many likes to eat the bones? It hard and no flesh. Cant imagine anyone chewing bones and eating skin at the same time.
