Grilled food help!

I absolutely love this time of the year just for the grilled food. I find myself in a rut though. I want to expand my recipie collection for the grill. We do hamburgs, hot dogs and chicken, all bbq sauced. I did a grilled taco chicken once that was great. I would love some new ideas though. I'm not much for ribs or brats. I know about hobo packs, and love them, but as we are just now getting into the season of fresh foods, I would also like new ideas for these. Thanks for the help!

Ribs on the grill are tricky because you want them to be really tender and not tough. It's best to cook them first in a shallow backing dish with a little water. Season them with salt, pepper, garlic and onion salt and cook for about an hour and a half, but not in a real hot oven. If you can put them in a crockpot that's even better. After they have cooked that way, you can prepare them for the grill. The trick to keeping them from burning on the grill is to cover grill with aluminum foil first and spray with Pam. Heat grill as usual and add ribs coated with one coat of your favorite barbeque sauce. When that coat is cooked, coat again. Total cooking time this way is around ten minutes give or take. You can do the very same thing for barbeque chicken wings too.

My husband and i were both chefs at a restaraunt when we met in college. Our favorite time of year is grill time! A few ideas that we use: We marinate a lot of meats and grill them. Marinate chicken in honey & BBQ to change it up a bit. We love to marinate chicken in Italian dressing and grill it. We marinate chicken in Teryaki to grill also. Marinate your steak in a bit of Italian dressing. We also use steak rubs alot, like hickory rub, or mesquite rub. Another item we grill is Potatoes. Take a baking potatoe and rub crisco on it, sprinkle garlic salt on it and wrap it in aluminum foil really good. We usuall throw it right on the coals and let it cook for about 45 minutes. Check it of course, and turn it once. We also love to grill corn on the cob. There are two ways we do this. One is to leave the shuck on, soak the whole thing in butter and garlic salt for about an hour, then place onto the grill until the shuck is crispy, or you can shuck it, place it on aluminum foil with about 2 tablespoons of butter and wrap it up tight, then throw it in the fire for about 15 minutes. Make sure to turn it, and check it after about 10 minutes, you don't want popcorn!

That's the first time I've ever heard of someone else using italian dressing as a marinade! I love using it the same way, usually on turkey legs or chicken! My fiance thought I was absolutely nuts but had to admit that it made poultry really juicy, tender, and tasty!

Oh yes! It has a wonderful flavor when grilled, and it does help the tenderness of the meat as well. Whenever we marinade with italian dressing we usually let the meat soak over night in the marinade in the refridgerator.

Thanks for offering to do that. I did bookmark a site or two, but sometimes others have better recipies than cookbooks. I'm looking for the simple, few ingredients, nothing fancy and expensive.

I think i have one existing sites for recipes ive been a member for that but neglected using it since im too busy now, but havent search the grilled part..try searching for " anitasrecipes.com" it caters also other recipes that are low in fats and cholesterol what i mean is you can find healthy recipes in there..

What are hobo packs? I'd love to know more about those. I really like both fish and veggies on the grill. I have a grill pan (it's a special pan you can use on your grill, it has vent holes), and I do lots of veggies in it. String beans are one of my favorites, and squash or eggplant are good too. Videla Onions are also amazing on the grills. Seafood can also be done on the grill, shewer some shirmp, salmon or tuna chunks and grill kabab style. They also sell these "fish grill cage" things so you can grill a fillet of fish if you want. Hope this helps a bit.

I don't know if hobo packs are the same for the original poster as for us but we cook something we call hobo dinners quite often! You toss whatever you have handy into foil, enough for one full meal per pack, season it, close the foil into a loose packet, and cook. We like to put in whatever type of meat we have handy along with potato chunks, bell pepper, a bit of onion, and chunks of carrot with a little salt, pepper, garlic, and a little pat of butter. Sometimes we crumble a boullion cube up in there too or a small dash of italian dressing. There's loads of seasonings or sauces you could use for different flavors that would make it delicious!

Yes, as the other poster said it is a foil wrapped pouch of food that has meat and veggies in it with whatever spice you'd like to come up with. You should do your fish on the grill like that, I think you would be pleasantly surprised.

What i like to do sometimes is stick like 6 or 7 large shrimp and grill those, and sometimes, i would take little chunks of chicken, steak, and the large shrimp and stick them all on a stick to grill up. if you havent tried bbq shrimp your missing out!!! mm its good!

We grill year round unless it's pouring rain or snowing, it's just what we prefer! We are like you and always do the hot dogs, burgers and chicken. I do like ribs though, but we rarely do them because its hard to get them to come out, but when we do (in case you ever feel like them!) we bake them in the oven for 40 mins first, then take them to the grill, they come out good that way. We have grilled pork chops before, very tasty! Also, we have grilled potatoes, and corn on the cob out there, and it comes out very good!

You never know, we do have some western ribs in the deep freeze, but I usually crockpot those, seeing as they are so snarky to cook....

get a webber you get the same great taste and you can do roasts ect as well i like a freshly caught snapper cooked in the webber the coals seem to go right through it giveing it the best taste

I love making vegetable packets and grilling corn still in the husk on the grill. I also really like to hollow out a fresh red or green pepper and stuff it with bread crumb stuffing and cheese and grill it. Grilled pineapple is amazing too. Or what about crab cakes? I've never done it before, but Paula Deen does and they look delicious! If you want more grilling recipes, you can check out Bobby Flay at foodtv.com. He does lots of nifty stuff.

I love veggie packets. I have never tried grilled pineapple, but have been meaning to. Paula does alot with the grill. As for Bobby Flays stuff. I would love to check it out, but usually he has a long list of stuff needed (I don't usually have) and he has an unlimited budget, unlike me. lol...

For a Yummy side dish: slice up some potatoes and onion. Get a sheet of tin foil and put some butter in the middle. Now add potatos and onion, season with salt, pepper. Now close tin foil around potatos to make a pouch. Put on the grill on med for about 15-20 min. Check once and add more butter if needed. Serve with chicken, hamburgers, steaks. Enjoy!!

We do turkey on the grill, and it's awesome! Also bacon wrapped pork tenderloin is good. Have you done corn on the cob on the grill? I don't particularly care for corn, but I love it on the grill! There's several ways to do it, I shuck it, soak it water and wrap it loosely in foil with some salt, pepper, parmesan cheese and a pat of butter and leave it on the grill for 25-30 minutes.

You will have to tell me more about the turkey. yum. What kind do you get and how do you do it? That corn sounds totally outstanding! I love corn and never thought to put parmesan on it. I will definately try this. Thanks!

My family love to eat grilled food too, from meat, fish to vegetables. We prefer doing it than frying them to avoid excess fats. From meat, we do grilled pork chop, pork ribs, and pork barbecue. So with the chicken too. But try fish too like milk fish, salmon, cut fish and tilapia. Just add salt and pepper with it. Also you can grill egg plant. After grilling it, you can add tomatoes and salt in it or you can try frying it after grilling, just deep it first in an egg (beat it, add salt) and fry it with oil but be sure to peel it off first before deeping it in an egg. My kids love it. Try it, and hope your kids will like it too.

I doubt mine will like it. lol. Its a battle to get him to even TRY anything let alone be openminded enough to appreciate flavors. I myself haven't had eggplant for years because I didn't like it as a child, but I should try it again and see what it is like for me now. I have been thinking since reading this though that grilled portabello mushrooms sound pretty darn good for a meatless meal...

I love doing shishkabobs on the grill too which are wonderful with chunks of fresh veggies and such! We all really enjoy seeing what kind of tasty combinations we can come up with. You can do all veggies, wind bacon through the chunks, use chunks of any kind of meat, mushrooms, zuccini, bell peppers...the possibilities are almost endless!

try this out...go to a local store with a good quality selection of fish...wrap the fish in aluminum foil with your favorite types of seasoning...i prefer lemon juice thousand island dressing tony chacheres salt/pepper and throw it on the grill for 10 minutes or until the fish flakes and looks cooked...or you could check out some websites and get the exact temperature it needs to be at ...up to you..but it turns out very very declicous and falls apart in your mouth
