My hubby started a new job the today which is fine and well except that he won't get paid for a month. Which is really discouraging. Since I'm really gonna have to budget and scrounge to make ends meet, I'm in desperate need for some cheap and easy recipes that I can make for us. Any and all recipes would be greatly appreciated. Thanks!

You know how you can somtimes get chicken legs and thighs for cheap? Or that cheap macaroni and cheese? Boil the chicken until done. While waiting for it to cool cook the mac and cheese.Put mac in cheese in a casserole dish add a little extra milk.Pick the chicken of the bone and put on top of the mac and cheese. Now melt some velvetta(I use the cheap off brand)add a little butter and milk.Make sure it is still thick.Pour over top the chicken and then put some bread crumbs on it.Place in over until the cheese it starting to look done.I am so sorry I don't have the amount of time to place in oven or the correct measurements.I do all my cooking by eye.I have yet to make a mistake with this one and it is one of my families favorites.I get mac and cheese for 29 cents and chicken for 49 cents a pound. The off brand velvetta cheese is also cheap and I don't use too much of it.Total cost for this is less than $3 if using 3 pounds of chicken !

We sometimes have things like vegetarian chili. We soak dried beans for a while, then drain them and add some tomatoes, corn niblets, and chili powder. It's very basic and tastes pretty good, especially over rice. We often have breakfast for dinner - eggs, pancakes, or french toast.

We get free eggs cause my sister in law has chickens so we do a lot of eggs and biscuits for dinner. I'll have to try that vegetrian chili, sounds good to me.

I don't have many recipes for you. Sorry about that, but I do have some tips on how to save money while planning. 1) cook from scratch. a 5 lb. bag of flour and sugar will make several more cakes than one box of cake mix. 2) buy in bulk. Buy bulk cheeses and shred them yourselves, instead of the costly pre-shredded cheese. If you don't use all, add a tsp. of cornstarch to the cheese, and it will keep it from sticking together. 3) If you want meat, add things to it to make it stretch... We always add refried beans to our ground beef to make a bigger batch of tacos. Rice and potatoes are also good ways to stretch the meal. 4) Casseroles go farther than a simple 'meat and potatoes' meal. I think they are easier to reheat, also. :) These are just a few things I do to help stretch the dinner dollar. I visited the hillbilly website another poster gave you. Wonderful site, and full of such good ideas!!! Good luck with the budgeting. Good luck to hubby, also with the new job! :)
