Help!! I am Gluten Intolerant.

My doctor says that when I eat glutens, my body can't absorb other nutrients. He has said that this is because of eating processed food and overeating. I am confused as I've never heard anything like this before. (Celiac) I purchased some Organic foods and baked goods. And these items were rather expensive. My problem is that I don't know what to do with these "hippy" nature foods. (No harm meant.) Please help!!

I am very familiar with celiac disease. Not only do my husband and step father have it, but I am a nutritionist and I do gluten free nutrition programs. It's extremely important that you eat a gluten free diet. That's easier said than done though. Gluten is in everything that you would never think of: soy sauce, any foods that list modified food starch as an ingredient, some deli meat, shredded cheese, low fat mayo, etc. Also, when you eat in restaurants even if the food does not have gluten in it naturally, it may have been cooked in the same oil as food that has gluten in it was. I know this doesn't seem like it should be that important, but it is critical. Eating even a little gluten is damamging to your intestines. Once you adapt a gluten free diet you will notice a lot of minor ailments will likely clear up. You can eat a "normal" diet. There are gluten free breads and cerals and pastas. There are still a lot of choices out there. It just takes time to adjust. If I can answer questions please let me know. Does ordinary cheese have gluten in it? When I first went on a gluten free diet the information I received indicated that salt had a gluten by product in it that kept it from clumping (as did most ground spices) thus, I assumed that any processed foods with salt would include a small amount of salt. Can you confirm this for me?

I have found that if you eat fresh foods vegetables and meats that it is not too expensive. It is the attempt to replace breakfast cereal and breads if that what are so costly. There are a number of cook books and an interesting magazine called "Living Without" that deals with all kinds of dietary restrictions, not just gluten, that I have found very helpful. It also has an annual list of restaurants that have gluten free and other allergy related menus. Very helpful

I have just been diagnosed as celiac too! I can't have dairy either! It sucks because there is not much I can eat. I'm mainly eating sushi and salad and have lost 8 kilos. However, there are a lot of foods that I am discovering. We lucky because people are becoming more and more aware of food intolerances.
