Tomorrow I am going to a strawberry patch and pick some big juicy strawberries. I'm looking for some delicious recipes using strawberries. I found one today in Today's Diet and Nutrition magazine May/June 2007 issue called Grilled Strawberries With Vanilla Gelato and Aged Balsamic. I had no idea that people grill strawberries. What are some other recipes using strawberries?

I never heard of grilling strawberries. I wonder how they would taste. I love strawberries. I have a package in my fridge right now that I need to wash and slice up. You can use strawberries for many things....making smoothies...mix into jello...add to a cake...you can eat them plain right out of the fridge....add them to ice cream...make strawberry muffins or make pancakes and add some sliced berries to the mixture. I like strawberries with Cool Whip on top.

Here's the recipe from the magazine;

Grilled Strawberries With Vanilla Gelato and Aged Balsamic
Wooden Skewers for grilling
2 teaspoons lemon juice
2 teaspoons canola oil
2 teaspoons sugar
1 pint large ripe(but firm)strawberries
1 1/2 cups vanilla gelato or frozen yogurt
4 teaspoons of aged balsamic vinegar from Modena
Clean and heat the grill or grill pan. Soak the wooden skewers in water to prevent burning.
In a medium bowl, combine the lemon juice,oil, and sugar;whisk with a fork to combine. Add the strawberries and turn to evenly coat.
Thread the strawberries onto the soaked wooden skewers and place on the grill. Turn frequently and cook it until they're just warmed and grilled marked, about two minutes. Remove the berries from the skewers and cut in half. Serve warm with gelato or frozen yogurt and a drizzle of aged balsamic vinegar.

Strawberry Tapioca

"A simple strawberry pudding with no dairy. And it only has three ingredients!"
INGREDIENTS
* 1/2 cup fresh strawberries, hulled and halved
* 1 1/2 cups water
* 1/4 cup quick-cooking tapioca
DIRECTIONS
1. Place the strawberries and water in a blender or food processor, and blend until smooth. Pour into a small saucepan. Stir in tapioca, and let stand for 10 minutes to soften. Bring to a boil over medium heat, stirring frequently to prevent sticking. Remove from heat when thick, and pour into serving dishes.

Chocolate Strawberries

"The world's simplest dessert! Strawberries dipped in chocolate."
INGREDIENTS
* 5 ounces bittersweet chocolate, chopped
* 1 pint fresh strawberries with leaves
DIRECTIONS
1. In a microwave-safe bowl, or in the top of a double boiler over simmering water, cook chocolate until melted. Stir occasionally until chocolate is smooth. Holding berries by the stem, dip each one in molten chocolate, about three-quarters of the way to the stem. Place, stem side down, on wire rack and chill in refrigerator until hardened.

Strawberry Cream Cheese Spread

"This is a delicious strawberry spread for bagels. It sure beats store bought spread!"
INGREDIENTS
* 1 (8 ounce) package cream cheese, softened
* 2 tablespoons confectioners' sugar
* 1 cup fresh strawberries, hulled
DIRECTIONS
1. In a blender or food processor, combine the cream cheese, confectioners' sugar, and strawberries. Pulse until smooth and well blended. Use immediately, or refrigerate until needed.

There's not really a name for this, but it's good!
1 frozen (Pepperidge Farm or Sara Lee) coconut cake
large box of Jello instant vanilla pudding
1 large container of cool whip
1 quart of strawberries (washed and sliced)
2 bananas, sliced
1 cup of graham craker or vanilla cookie crumbs
slice the cake in half, then slice each half in 4 slices. Lay the slices in the bottom of a cake pan
(on thier sides). Mix up pudding according to directions and spread half of it over cake slices. cover pudding with banana slices, and then cover banana slices with half of the strawberries. Spread remaining pudding over strawberries. Sprinkle cookie crumbs over pudding. Carefully Spread cool whip over cookie crumbs. Top with remaining strawberries. YUUUUUUUUUUUUUUUUUUMMMMM!!!!!!!!!!

Actually, if you don't like coconut, you can substitute the cake for either pound cake or angel food cake

I'll tell you how to make the strawberry Summer Pudding.
INGREDIENTS
250g Strawberries
250g Cake crumbs
1 Egg yolk
40g sugar
10g Corn flour
METHOD
Place strawberries and sugar in a large saucepan over medium heat until sugar dissolves and berries release juices. Increase heat; boil until mixture thickens slightly, stirring often, about five minutes. Remove from heat.
Put into cups and mix the strawberries and crumbs and add the egg yolk; steam for 45 minutes. Serve with strawberry sauce and a scoop of Ice cream.
