First it would depends on the cat.
If it is a cat that has been locked in an apartment all its life... it would not survive very long on the street.
A cat will always find water somewhere by natural instinct if it is an outdoor cat.
It will also find food... but perhaps not as much as it is used to... and will get skinny. If it is lost... it will also become a prey for other cats defending their territory. That is the real danger... as it will get hurt and will get sick... preventing it to look for food and water.
However... it very much depends where the cat is... it will stand a chance in the suburbs or the country side... but not in the concrete jungle.
The most cruel thing you can do is to abandon your cat. If you can afford to go on holiday... you should be able to afford the cost of a kennel. Your cat would easily survive one week if you left it a large bowl of water and one kilo of dry biscuits.

Hi, friend.
Once I've read (it was a cross-words magazine of my country indeed... but it is a very serious periodical and I'm sure I remember exactly) that a cat can survive without food for 7 days.
I think it's possible since as predators they have to be very versatile... I don't know about water.
Although, I can tell you that if my mother-in-law forgets to give some water to her kitty, she jumps on the closet and tries to drink from the water or the sink.

Without water? I guess a couple of days like humans, although probably depends on the type of cat you have.
