How do I tell if my ground beef is OKAY

I have froze a package of ground beef some time ago before April 20th, the expiry date of the beef, on the package. I put this in the fridge two days ago (May 9th) can I eat it?
What is healthy ground beef supposed to look like? Is there a decent test?
I'll open it up and see..

Having worked with meat for 3 years before I left to have my kids, I'd have to advise you not to risk it. Fresh ground meat should be frozen or used within 3 days but eaten as soon as possible after it's been defrosted. Just like sausage meat, it has a higher ability to generate bacteria and unless you're 100% sure it was frozen the day it was made then you should throw it out.

Freshly cut surfaces of any piece of beef will be bright red, deepening to a brownish-red on exposure to air. Minced beef should look red; if it is pink, the proportion of fat will be too high, whereas if it looks brown, it may be slightly old. Hope this information is useful.
