My one year old refuses to eat breakfast after drinking a bottle of milk some days.I give him boiled egg yolk, french toast and some dishes made of sooji.
Also,
Idli which is a south Indian food for breakfast and many even prefer to have it for dinner. It is very simple to make and yet nutritious.
Ingridients:
Idli rice-11/2 cup
Boiled rice-1 cup
Urad dal -1 cup
Salt -3/4 tsp
Rinse idli rice and urad dal and soak for about 3 hours.Grind it in a mixer grinder.Add salt and grind well by adding enough water.Allow it to ferment overnight or 8-12 hours.
Apply slight oil into idli plates. Pour thr batter into idli plates and steam it and serve with some tomato dip or cheese or something not spicy.
Perhaps you may not like the above recipe for your baby.So Searched the net and found 2 other recipes:
Banana Pancakes
Slice bananas thinly
Coat with pancake batter
Lightly fry in pan until golden brown
Serve as Baby Finger Foods for snack or at breakfast time
and
Baby Cereal Pancakes
1 cup whole wheat flour
1/2 cup baby barley cereal (or other baby cereal)
1 cup formula (or another liquid such as milk)
1/2 cup mashed banana (or fruit of your choice)
1 tbsp melted margarine or butter (unsalted type)
3 EGG YOLKS
1/2 cup baby oatmeal
apple juice (about 1/2 cup) Use water if you prefer
Add cinnamon, nutmeg, dash of vanilla or other flavourings if you wish!
Mix all ingredients together and add enough juice to make pancake consistency. Cook on cook top in frying pan as with "regular" pancakes!
I hope this will help you.

At 1yo, children are learning to feed themselves. So you could try easy to eat things like cheerios, sliced bananas, scrambled and cooked eggs, small pancakes. All of these are easy for young children to feed themselves and they're healthy too.
When my children were young and wanted to eat what I was eating, I'd let them. Even if I was eating yogurt. I'd give them their own bowl of yogurt and a spoon, but I'd mix single grain rice cereal into their yogurt to make it thicker and easier to feed themselves.
If I made pancakes, I'd make them small.. the size of a fifty cent piece. I put a little butter on them as they come off the hot griddle and then give them some apple butter or mashed berries to dip their pancakes into.

I give my daughter regular oatmeal with different flavored applesauce's mixed in. She really like oatmeal and it is good for her. Other days I may give her half of a banana and some cherrios. Just try different things. If you want You can try eggs. I have also given her pancakes and French toast.
