I'm not sure it was ever a book, but look for The Waltons. It was a TV show that ran for years and years. They were the greatest, biggest, most caring family that ever lived.

There is one Danieele Steel novel I had read called "No Greater Love". It was a beautiful novel revolving around a family of 5 children who lose their parents on the Titanic. And how the older daughter takes care of the whole family. It was very touching..I cried when reading it.
