What is your favorite tasting fish?

I really enjoy the taste of Bluegill. They are smaller and can't really fillet. I have found if I slice the top back fin the full length that after fried I can peel the entire side off with few bones. I enjoy the flavor so much that it is worth the trouble. Catfish are my easiest to fillet and cook though which is what my wife enjoys.
