What are some of your favorite egg dishes? I'm always up for something other than the traditional eggs. Do you prefer brown or white? What have you found to be the best way to cook a hard boiled egg?
My favorite egg dish is deviled eggs. And I prefer the white eggs myself. Brown is a little bit more potent than I like in an egg.
The best way I have found to boil an egg is to slightly crack it (just enough to hear a pop, but no cracks), which in itself is an art.. lol.. Then bring to a boil, shut off and let sit 10 mins, no more, no less.
This will give you a pretty yellow yolk (no green) and the hot water will seep into the cracked egg and gently seperate the membrane from the shell... making it easier to peel....

You hard boil some eggs (whatever amount you'd like), then cut in half lengthwise, remove yolks. Smash yolks with a fork until all fine and crumbly. Add mayo (miracle whip I prefer) and mustard (sometimes I use different flavored mustards), stir together and refill white indents with filling. Dust lightly with paprika.
Nice, quick little snack!

brown, chocolate brown, red, blue, white, pink, cream, beige, green, speckled
we get all sorts of colors of eating eggs, but the color makes no difference in flavor. I do prefer free ranged eggs however. richer in vitamins and color.
I really like duck eggs.

lol. I hear ya on the different colored eggs. Although that rainbow assortment is usually only found around here at Easter time.

I love eggs. Deviled eggs are really good. My favorite dish is a fritata where you brown some country style hash browns with chopped onion and bell pepper, add some cooked bacon or sausage, pour beaten eggs over it and put in a 350 degree oven for thirty minutes. Top with cheese and enjoy the pleasure of eating it. We also like chorizo and eggs. That is our oldest daughters favorite meal. When I make potato salad it has an equally amount of egg and potato so it is almost an egg salad with potatoes in it. Ummm!
I never heard your method of popping the egg first and most cook books well tell you to boil them for 20 minutes so I never tried just ten and turning the water off as soon as it reaches a boil. I will have to give it a try.

Actually I got this from Alton Brown on Food Network. He suggested it, I tried it and found that more often than not, you can get a nice egg out of this. I really hate it when you peel an egg and half of it comes off with the shell.

Man we go through eggs in our house faster than anything else we love eggs. We eat em just about every way you can make em except poached. I love toad in a holes, deviled, umm boiled eggs in my salads. I also love over easy eggs & my whole family eats those including my 2 year old! She loves the runny yolks hehe I like your tip its one Im gonna try! Oh I also make a yummy breakfast quiche with eggs bacon green onions mushrooms & mozzerella cheese :] thats preety good too :]

for me, i love sunny side up egg and egg salad... so yummy... when u eat ur sunny side up egg, put some catsup on top, it tastes great... white or brown - i love them both...
