Usually I don't bother too much with a lot of cooking for lunch, but with my husband home on rostered day off, & a real winters day developing, I decided to try out a recipe someone gave me recently.
It's healthy, cheap, easy to prepare and delicious.
LENTIL & BACON SOUP
Use any quantities of the following ingredients.
Lightly fry cut up leeks (or onion if not allergic). Add bacon pieces (or ham if on low salt diet).Fry garlic with this. Add finely copped carrots & celery. Add parsely, fresh or dried. Fry all this gently for a few minutes.
Now add water, at least 1.5 cups. Boil. Add dried red lentils. Simmer gently until the lentils are mashed.
Serve. It can go a long way of you prepare a lot.

I love lentils, but have not convinced my husband yet. It is so funny to think that you are having winter, as we are just heading into summer. That is one of the reasons I love myLot. Back to the lentils, I had a friend who made wonderful meatless burritos out of lentils. Hubby prefers the green split peas. I like soups of all kinds.

I was taught exactly the same receipe in Germany but instead of the bacon you sliced weinerwursts (hot dogs). This was a big favorite with my family.

This is almost exactly like the lentil soup recipe I make. I love it. I usually fry up a couple of pork chops and cut them up into small pieces and add them to the soup when it's cooking. I love to make homemade bread to go with this soup. I've got a breadmaker, so it's easy.

This sounds fantastic. My husband will love it. I'm filing it away for next fall. We are just starting summer here. Thanks for the recipe.
