Egg recipes?

I went grocery shopping today, and got the standard stuffs, eggs, milk bread, etc. When I got home, I found I have 2 dozen eggs in the fridge already! I bought another 1 1/2 doz. YIKES! What am I going to do with all these eggs??? My kids like scrambled eggs and french toast, so that's 2 good meals. I would love to bake something with all of them, but, my oven is on the fritz. Do you have any egg recipes for the cooktop, or any more suggestions for me than just to hard boil them all and make deviled eggs? LOL! Any help or suggestions will be welcomed!

Everybody loves (pickled) eggs, just get out a big old jar and lid and pickle away! You'll probably find a good pickled egg recipe in your cook book. That'll solve the problem of at least 2 dozen eggs. By the way, (pickled) eggs last a long time in the jar in the fridge!

Well, this happened to us as well. We went Grocery Shopping yesterday, and it is only 2 of us, but the store we went too, the Cheapest way to buy Eggs was buy one 18 pack, and get another one Free. Well, we went ahead and bought these, and now have a lot of Eggs ourselves. We plan to have Eggs and Bacon at least 2-3 times, and make Egg Salad, etc. with these. We just need to make sure like you not too overdo it to where we are sick of eggs as well.

My first thought when I got home, is "Is it too late to dye eggs for EAster??" LOL! Yes, we're going to have to plan carefully, so we don't overdo the eggs.

Uh oh! I have done that sooo many times! Time to break out the quiche recipes!! My family loves quiche! You can add almost anything that you family likes to a quiche. Here is a website that shows how to make EVERY type there is! Ha! http://www.basic-recipes.com/r/quiche/index.htm You can also serve some deviled egg hordeovers! Then again there is egg salad sandwiches for lunch. Oh, and how about a great breakfast of egg/bacon wraps (in a tortilla) Enjoy!!

Oh and I forgot, make an old-fashioned pound cake for desert...the best I remember (from watching my grandmother) there is like 6 eggs in one!! Delicious! Slice it really thin and top wiht strawberries!

Those sound great! Too bad I can't bake the cake. :( My heating element in my oven melted last week, and I don't have a replacement yet. (sigh) My grandma made the world's greatest chocolate angel food cake--used 12 egg whites! Then she would make the 2nd best cake--sponge cake with the 12 yolks. :)j I may just have to borrow my neighbors oven for a while. LOL! Do you think they'd mind? Cooking my dinner and then theirs? LOL!!!

hey. i got something 4 u.u boil the eggs hard. u cut them in half and pull the yellow stuff with very much care. after that umash the yellow stuff and mix with some sweet mustard and green onions if u like onions choped very finely. add seassoning and mix well. when every thing is mixed well u fill the halfs with this mixture but not only the hole from yokes , u cover the entire surface. if there is some mixture left u can make some balls and put them on the filled halfs so they would look like a bird. make from carrots a beek and pepper seeds or anything else some eyes. put some leaves for wings and there u go. oohh after all of this if u still got left some mixture add some cream or mayo mix well again and put it into a large shalow plate and place the ducks onto this sauce like on a lake. it's easy to make this and maybe fun 4 your kids. enjoy

My family has always loved my egg salad sandwiches, you can ues anything you like it it, I use finally chopped onion, finally chopped celery, chopped dill pickles with a bit of pickle juice, salt pepper, celery salt and some garlic powder. Chop your eggs with a mashed potato masher, so that they are good and crumbly. Add all of your ingredients together with Miracle whip and a spoonful of mustard mix and chill. Use mayo if you prefer, you can add red or green peppers, just anything you like or nothing.

LOL! I don't know if the family would eat egg salad sandwiches. They eat potato salad (which is pretty much the same thing--only with potatoes added) so I don't see why they wouldn't. Hmmm... maybe we'll have a simple dinner this week. :)

you cn give this one a try, i make many variety of dishes with eggs because my family love eggs. for a small preparation i am writing down with 6 eggs, if you feel comfortable you can do it with 12 eggs also. all you have to do is double all what i write. 6 eggs 1 tsp white vinegar 1 tbsp mayonaisse 1/4 tsp prepared mustard salt and pepper to taste 1 tsp paprika 2 leaves of lettuce, i love them. make the eggs hard boiled. remove the shell, cut in length wise and scoop out the yolk. place the yolks in a medium size mixing bowl and mash them. blend them in vinegar, mayo, mustard, salt and pepper. you may need to add more mayo to hold the mixture together. but remember that it should be slightly dry. now carefully put the eggg yolkmixture back into the egg whites but do not pack it . there will be enough mixture so the whites are over filled. sprinkle with paprika. place it on a bed of lettuce and cool it before serving.

you can try making some egg jam. 8 eggs to once coconut. Get once coconut, grated. Squeeze the grated coconut dry to get the coconut milk. For convenience, you can use those that come ready in carton from the supermarket as well. about 1 to 1 1/2 cups of sugar. More if you like it sweeter. Stir the coconut milk, eggs and sugar over the stove at low heat to reduce the mixture. Continue stirring till you get a custard like texture. If you like it a little runny, once it cuddles, you can stop. But at this stage, the egg jam will not last long in storage. What I will usually do is to cook it till it turns slightly reddish-brown in color. The whole process should take about 45 mins to an hour of constant stirring. Keep it in the fridge, it should last about a week. I love to eat it cold directly, cos it is like eating a coconut egg ice-cream. Applying some on toast is also a delightful way of starting the day! Goes best with poached eggs and coffee or tea in the morning! The local name for egg jam is Kaya. Try it... it is really very nice!

you are most welcome! I hope you like it... there are some pictures you can look at for reference to help you to decide if the texture of the egg jam you are cooking is correct. I can't post pictures in my comments yet... so you have to go to the links to view them. there are two colors to the egg jam. Reddish-brown is the result of the sugar carmalizing while you are cooking the jam. If you want it to be more brownish, carmalize some sugar before hand before you add the eggs and the coconut milk. http://www.aspoonfulofsugar.net/blog/images/coconut_curd.jpg Green egg jam will be formed if you add some pandan leaves to the mixture while cooking. I know what you mean.I always end up with more eggs than anything else.The only thing I cook that uses eggs(of coarse besides the egg itself)is cakes,cornbread,and meatloaf.I have a website that might help you out with this.It is called http://www.recipecircus.com.It has all kinds of recipes for just about anything you can think of.

Whenever I have eggs, I use the following reciepe. First, I fry some onions, in a pot. Then, I add the eggs, 2 spoons of tomato paste, black pepper and some vegetables and butter. I mix up the whole thing and let it cook for about 10 minutes, et voilá. An easy to make and delicious plate.

Well I would make devilled eggs, egg salad for sandwiches and one of my families favorites - egg drop soup. I use for it chicken broth and sometimes put very finely chopped onion in it, when the onions are well cooked I bring it to a boil and gradually pour in the beaten eggs. We think it is great and it can all be done on the top of the stove - don't need the oven for any of these.

I realize this is an old discussion, but I figured I'd add my 2 cents anyway. Flan is a hispanic dessert made with eggs, condensed milk and sugar. Spanish Tortillas are really good. It's similar to an omlette, but I believe it is maked. The main ingredients besides eggs are potatos and maybe some kind of meat, like spanish sausaged and I believe it can be eaten for lunch or dinner. For breakfast, besides the obvious fried eggs, scrambled eggs or omlette, you also can use the eggs to make french toast.

Sounds great miamilady! I haven't had flan in a very long time (I think I was in high school.) I may justhave to find a recipe and give it a try again. :)
