I wish I had the perfect sauce recipe!

I have been trying for YEARS to find a spaghetti sauce recipe that tastes like the sauce served in Italian restaurants. I don't know what it is, but no matter what combination of ingredients I use, it never tastes the same. Do you know what I mean? The spaghetti sauce served in restaurants is rich and thick, with a good herb flavor. Mine is always too watery, too salty, or just plain bland. I'm about ready to just ask the restaurants if they will sell me their sauce! Does anyone have a good sauce recipe? One that tastes like an Italian Grandma made it?

I dont know what you use, but the key is slow and simmering. When I begin my sauce, I actually use a jar of any kind as a base. I will warm it very slow, and add EVOO, (extra virgin olive oil). I will also grate a little bit of nutmeg in it. When the pasta is cooking, I add EVOO to that as well. Drain the pasta really well, that keeps it from being to watery. If you put meat in your sauce be sure to use extra lean and drain it very well also. A lot of people start the sauce the day before serving. That is also a great way to have the spices mixed well. You can use a crock pot for this method. I enjoy a lot of garlic in mine so I use the garlic cloves and add them to the meat that I cook. Of course to your own taste. Nutmeg, huh? I wouldn't have thought to use that in sauce!

I watch alot of the Food Network. My fav is Rachel Ray, she use alot of EVOO and adds nutmeg to everything she cooks Italian. I have tried it and must say that it is very tasty!!!
