What's the best cheese for your Bolognese?

I know I might offend some pasta purists, but I was wondering: aside from parmesan, what cheese does everyone put on their pasta? I love gouda and gorgonzola, and they taste mighty good on pasta, especially Bolognese. I've tried mozzarella too, which is good on just about anything. What about you?
