I "adopted" a soldier 2 years ago (for about 6 months)and my husband over in asia for a year. Chips were a popular item..actually any food item is appreciated, books, magazines, crossword puzzles (even though there is not much free time,)pack of playing cards.
of course there are the typical, socks, razors, tooth paste.....
Note cards and stamps are nice, that way he can write back.

My husband was over last year and sending care packages was a huge help with getting through the deployment. I sent him all kinds of food, chips, doritos, and I also looked at the party favor aisle at my local Walmart and they had these little "Rock'em Sock'em Robot" games, I sent a couple over and the guys just loved them!!
I also sent over the Campbell's Cup of Soups, they went over well too!!! I would go to the local Dollar Stores and find different and neat odds and ends to send them. Oh, and my husband loved when I sent him over Febreeze!! That was a big hit (not in the aerosal cans!!)

You might try this website. My daughter and her Girl Scout troop is helping the cause by making Christmas stockings and stuffing them to send.

you should go to http://anysoldier.com/
they have links/pages on what you should send, what is needed, and the best ways to send packages so that they get there in a timely manner (ie, in time for a birthday or christmas).
have you sent homemade cookies before? while it is a really great thing to do, it is probably not the best idea. here is a response from the websites faq page...

We warn the Soldiers to not eat anything that does not come in a factory sealed package.
This is really a sad and stupid sign of the times, but you can understand that for safety reasons it has to be this way. The Soldiers will throw out any homemade items so please don't waste your time or money sending the most bestest cookies ever made.
