I need some nice, refreshing salad recipes for summer.

DO NOT send me websites, please describe your favorite salad as much as possible and the dressing, if any. It could be made from pasta, seafood, potatoes, different vegetables, fruits, etc. Even if you buy them, tell me the market and/or the name of the company that makes them

My favourite type of salad?
One mad up with nothing green and no reds. No salad at all, I'm not a salad person.
Now a fruit salad is lovely. Especially those tiny little sweets!
I hate black jack tho...

Here is one I love. I do not like potato salads, which is something everyone seems to serve, but this is different and I've taken it to pot lucks to have it disappear on me.
Sweet Potato Salad
1 1/2 pounds sweet potatoes
juice of 4 limes or 2 lemons
2 large red apples
1 cup chopped celery
3/4 cup chopped cashews or pecans (I use raisins instead because I don't like nuts in my salads)
1 cup mayonnaise or miracle whip
Simmer potatoes until soft but not mushy. Drain and cool. Peel and cut into cubes. Sprinkle with lime or lemon juice and chill. Dice unpeeled apples and celery and add the nuts (or raisins) to the potatoes. Mix with mayonnaise and chill. Makes about 1 quart.
It's not that hard to make and it tastes great. I hope you enjoy it.

A very simple one is cucumbers and onions and cover with Green Goddess Dressing.

This is one of my favourite summer recipe.
For 2 persons you need :
150 gr of pasta
250 gr of little tomatos (or big tomatos,but litte are better)
3 leaves of basil
1 mozzarella
salt
some oregano
oil
Cut the mozzarella and tomatos in little cubic pieces,add to them some salt,oil,oregan and basil cutted in fine pieces.Put all the ingredients in a big cobble stone.
You have to prepare pasta and when it's ready,let it to make cold for some minutes.
Then you have to mix in the cobble stone pasta with all the ingredients.
Don't cook pasta for too much time ;it has to be "al dente"
