Being a lover of seafood, I had to rant and rave on how wonderful the panfish we caught over the weekend tasted. Even the kids loved it. Just a light batter and some lemon deeeeeelish... wondering if anyone has any good recipes for other seafood, shrimp, white fish etc?

I really love seafood too! I think they are really nutritious and taste so nice. I have got a recipe here which I personally love so much and I want to share with you:
SEAFOOD IN A PUMPKIN (Serves 4)
Ingredients
1 small size pumpkin
4 shrimps
4 scallops
80g fish fillet
80g cuttlefish
250ml chicken stock
2 tablespoons oil
1 teaspoon corn starch
1/3 teaspoon salt
¼ teaspoon sugar
some garlic, fine chopped, and some ginger, sliced
Steps
1. Open the pumpkin up by cutting off the top of it. Remove the seeds. And steam over boiling water in a large pot for 15 minutes.
2. Heat up a frying pan. Add oil, and then add garlic and ginger to stir-fry until fragrant. Add in sea-food to stir-fry for around 5 – 8 minutes or until medium done over medium heat.
3. Pour chicken stock into the pan and bring to boil. Season with salt and sugar, and then add corn starch in and keep stirring to thicken the sauce.
4. Pour the seafood into the steamed pumpkin. Serve immediately.

Hey, Sounds like you had a great catch, my house hold loves seafood, living at the beach, we just go out get it, when we're hungry for it. Fish on the other hand, well depends if they want to hook onto our line lol. If set nets were aloud then we would have alot of fish, I reckon... Baked Fish wrapped in foil, with lemon, onions and Italian herbs or oregano... White fish cooked in milk, with salt n pepper, thin sliced spring onion, and grated cheese for topping garnished with slices of tomato, Bake at 150C for 45 minutes or until cheese is golden brown, this is really nice with any fish... How about trying this Calamari (Squid) Stew:
1 1/2 lb. Squid
1/4 cup flour
1/4 cup olive oil
1/3 cup butter
1 large onion, peeled & chopped
2 cloves garlic, chopped
12 parsley sprigs, leaves only
1/2 cup chopped peeled tomatoes
1/3 tsp. black pepper
Pinch crushed red pepper
Pinch of salt
1/2 tsp. basil
1/2 tsp. oregano
Clean Squid and cut in 1 inch pieces. Sprinkle with flour. Combine olive oil and butter in pan and heat. Add onions and cook to medium brown. Add garlic and parsley; stir. Add Squid, stir, cover and cook for 20 minutes. Add tomatoes, black and red pepper, salt, basil and oregano. Stir, cover and cook for about 45 minutes. Serve over a pasta of your choice.
Serves 4-5
