What do you do with left overs?

One of my neigbors told me that she throws all the left overs into a big pot and cooks everything up into soup after three days. She just adds two cans of chicken stock and some seasoning and it turns out great. I haven't tried it yet. But, I was wondering what you do with your left overs. How do you turn scraps and bits of left over food into delicious meals that families love to eat?

In my home it really depends on the left overs. Most times they just sit in the fridge never to be eaten again. I feel bad that I have to end up throwing much of it away.

If I have leftover mash potatoes...I make potatoe patties. YUM Veggies I do the same to, I make a big pot of soup with them. YUM! Other stuff we usually just eat for lunch the next day or so. COrn...leftover corn. I make fried patties out of theese too

Those potato patties sound heavenly. And, it's funny you mention them, cause I was just thinking about doing some kind of home fries today, with real potatos. Do you have a recipe for the potato patties. I'm not sure how to go about cooking those. Would love to try though. Thanks!

Beautyqueen, I don't know if it's how jolene does it, but here goes: Add 1 or 2 eggs, depending on how much leftover potato you have, and maybe a smidge of milk. It should be a consistency you can still shape with your hands - you may not need the milk. If you want, add herbs, cheese,or whatever...leftover bits of chopped cooked veg...then form into patties and cook in a skillet with a little oil or butter till browned and warm. (And firm, if the batter was on the wet side...:) ~Sara

We just put ours in freezer containers and pop them in the freezer. I have done this for about 6 years now, we have neices that are trying to live on their own, and they are young. They always run out of money to feed themselves on and either show up for dinner, or come over and ask if there is anything in the freezer for them. There almost always is. I feel good that I am able to do this, and to help them out until they can stand on their own two feet. It is working I think, because they come by less and less often.

I will bring it home and eat it next day. I don't want to waste the food. They don't go bad and why not eat it again? Sometimes I will also add other new foods inside so that it will taste well.

hmmmm....we don't ever have left overs except for the holidays. With a family of 5 and 3 of them being older kids, and their friends over for dinner, there is never any left overs. I hear to often, "is that all we have for dinner". I think they are all bottomless pits. I have heard of leftover soup, but never had a chance to make it. I do know my friend makes salsa out of left over chilli, or spagatti sauce out of left over salsa. I know they like meatloaf sandwichs out of leftover meatloaf. I think if you had veggie's left over they would be good in the soup, or just mixed alltogether.

I recyle them, of course. If you're a little bit creative, you'll find a way to make delicious meals out of left-overs. You name the left-over dish, I'll give you a solution for the next day!!

It depends on how big the leftovers are or what kind they are. We call that fridgecleaner soup. If there are any cooked vegetables left over I eat them, if there are any meat left over, my husband eats them. I usually make macaroni casserole and if there is some green or and red peppers, corn, and onions, I add them to it. If I am making shepherds pie, and I have some mixed vegetables left over, I add it. But I do have a jar and a half of chicken stock down in the freezer, and that 'fridge clenaer' soup sounds like a good idea.
