I love chicken curry and love the taste of the gravy when it is cooked with the chicken. Try this one, you might like it;
2 whole leg chicken - cut into pieces
7 tbsp curry powder - add some water to make it paste
4 tbsp dried chili paste
4 shallots - chopped
3 cloves garlic - chopped
1 1/2 inch ginger - chopped
1 inch galangal - chopped (optional)
1/2 cup thick coconut milk
1/4 cip tamarin juice
3 pcs cloves
1 star anise
1 1/2 inch cinnamon stick
2 pcs cardamom
3 cup water
some cooking oil
1 cube chicken stock
1 red chili
1 tomato - cut into 4 pieces
Preparation
Heat the oil and add the shallots, ginger, garlic and galangal and all the spices. Stir for 3 minutes until the aroma arise, add the chili paste and curry powder, let it for a while until it produce some oil.
add the chicken and stir for a while, add the water. The water should be enough to cover the chicken. Cook until the water is boil and reduce.
Add the tamarind juice, chicken stock and the coconut milk and cook until the chicken is tender and the gravy become thick. Add the the chili and the tomato before remove the curry from the heat.
This curry ic nice to be eaten with the hot plain rice.

There are heaps of tasty chicken curry recipes on the Curry Focus website. I think you can add your own to if you feel like contributing to the site. I recommend the vindaloo - it was delicious and quite easy to make, which is saying a lot for me as I am not the worlds best cook!
