How do you make your chicken salad?

What do you put in it? I was just wondering how do you make your chicken salad. The way I do it is as follows: I shred the chicken, put one can of mix vegetables and diced celery, I fold in the mayonnaise and add salt and pepper. It's very delicious. And you how do you make it?

i use shredded chicken diced onion and celery one clove of garlic...i add a tablespoon of hot mustard to the mayonaise and then mix all ingredients ...if you want a different texture or more substantial side dish precook about two cups of rice adding it to the mix is still a light cool lunch or dinner side... i serve either on a bed of fresh lettuce with sliced tomatoes and cucumbers

I shred chicken. Or I open a can of shredded chicken. Add diced celery and shredded carrots, add chopped up slivers of almonds. Than mix it all with miracle whip dressing. Your sounds good. I am goingto have to try it sometime.

This is my recipe for a simple luncheon chicken salad with celery and mayonnaise and hard cooked eggs.
You will need
2 cups cooked cut-up chicken
1 cup chopped celery
1 tablespoon lemon juice
salt and pepper to taste
1/2 cup mayonnaise, or as desired
2 hard-cooked eggs, chopped
Toss first 5 ingredients together, adding enough mayonnaise to moisten to desired consistency. Fold in chopped eggs. Serve on lettuce leaves and garnish as desired.

I have never tried it with hard-boiled eggs. I need to try it and see, seems delicious.

MY FAVE!!!!
I start by boiling 4lg. Chicken Brsts with a 1/2 onion and a clove of garlic. Once it is cooked... I shred the chicken and place in a large mixing bowl. I use the following:
2 lg. dill pickels
2 sticks of celery
25 lg. green olives w/pimento
1 sm. bellpepper
I chop all of the above cubed as small as possible. After adding all to the shredded chicken I fold in 2 lg. spoonfulls of mayonaise and 1 lg. spoonful of mustard.
Add salt and pepper to taste.
Fresh and Delicious!!

I don't really make chicken salad but its chicken macaroni salad. It's sweet and with lots of pineapple in it. It's really filipino style. I just mix everything. Shredded chicken, then salad macaroni, cubed carrots, pickle relish, crushed pineapple, pineapple tidbits, mayonnaise, condensed milk and nestle all purpose cream.

Here is my favorite chicken salad to make in the summertime:
Summer Chicken Salad
2 cups cubed cooked chicken
1 cup halved green grapes
1 can (8 ounces) pineapple chunks, drained and halved
1 celery rib, chopped
1/3 cup mayonnaise
1/4 teaspoon salt
1/8 teaspoon celery seed
1/8 teaspoon pepper
1/4 cup chopped pecans, toasted
1 medium ripe avocado, peeled and sliced
6 large slices cantaloupe
Lettuce leaves
In a bowl, combine the chicken, grapes, pineapple and celery. In a small bowl, combine the mayonnaise, salt, celery seed and pepper. Stir into chicken mixture. Cover and refrigerate for at least 1 hour.
Just before serving, stir in pecans. Serve with avocado and cantaloupe slices on lettuce-lined plates.

I keep watching the late night info-mercials, there is one for a food processor where they take left over fried chicken from take out and mix in celery stalk, mayo, and salt and pepper. I want to give that a try some time in a food processor. It sounds like a good way to get rid of leftovers.
I like those easy ways to make something quick like this.
