Potato Salad

Here is my recipe for Potato Salad.
4-5 medium potatoes, cubed and boiled
3 eggs, boiled and chopped
1 onion, chopped
3 tsp. sweet pickle relish or 3 sweet jerkins, chopped
4 heaping serving spoons fuls of Miracle Whip
1 tsp. dry mustard powder
Salt and Pepper to taste.
Mix all ingredients up in a bowl and refrigerate for 2 hours before serving.
I know there are several different recipes out there. Is this similiar to what you use?
I use the dry mustard powder because my husband and son do not like mustard.
Do you prefer mayonnaise (Miracle whip) or mustard potato salad?

well the fourth of july is coming up! I've decided that when we do God and Country Day on Saturday at church...that I'm going to splurge and eat everything that is NOT on my diet! lol

I love dill pickles too. Don't do the real mayo...I just prefer Miracle whip. And what is up with the olives? lol
I do like the wet yellow mustard, but hubby doesn't. My mother won't eat it if I put eggs in it. I have to leave them out of hers. Guess that's why there is so many combinations...because of everyone's different tastes.

I had another type of potato salad that is absolutely yummy! It was called baked potato salad. Ingredients, potatoes with skins on, shredded cheese, chives, green onion, real bacon bits and sour cream. It is a little expensive to make but it is delicious!

That sounds wonderful! I will definately be trying this one. Thanks for this recipe. You know that I love to cook and eat, so I'm always on the lookout for something new and different and really good.

This is really similar to what my mom made. T0 make it fancy, and give it color she would sprinkle paprika across the top. Hubby and I are bigger on dill pickles than sweet, so usually we will use chopped dill pickle, or dill relish (did you know they made this?)
When we garnish we will sprinkle bacon bits (real not soy ) on it. I also might chop up the same amount of celery as I do onion, for a little more crunch. It is really true, there are lots of variations on potato salad.

I too prefer dill pickles. My family all prefer sweet though, so I usually get voted out. Every once in a while, I will put everything else in, pull out a little just for me, and add dill pickles.

well, I'm glad I posted it then. This is one of my favorite summertime treats and one I make to take to picnics all the time, though I'm careful with the eggs and mayo to keep it in the ice chest.

You're welcome for the recipe. I use mayo too at times. It just depends on the mood of my family. My hubby prefers mayo with just a hint of mustard. Daughters will sometimes add more mustard to their's once it's on their plates~
