We are all busy people. But sometimes it's nice to cook in your own kitchen. What are some one dish meals that you enjoy preparing? It's great cos you can add in the ingredients that you like, have a balanced meal and also have only one plate per person to wash up. As opposed to one dish of meat, one dish of vegetable, one soup dish and one dish of eggs. This is my one-dish meal recipe for two:Cabbage and pork belly mixed rice Half a cabbage (sliced into strips) Yam (diced into cubes) Pork Belly (300g) Black mushrooms (5 sliced) Dried prawns (15 small) Rice (1.5 rice cooker cups) Half an onion (diced) Garlic (5 cloves diced) Dark Soy Sauce Season the pork belly with dark soy sauce. Fry the onions, garlic, and add pork belly till 3/4 cooked. Then add in the mushrooms, yam and dried prawns and fry till fragrant. Add washed rice and fry till mostly dry. Add entire mixture into the rice cooker. Add 2 rice cooker cups of water into the mixture. Wait for the rice cooker switch to flip from "cook" to "keep warm", then immediately add the cabbage and stir in. Let the mixture sit for another 5 minutes, then voila! What's your favourite one dish meal recipe? share it!

There are lots of one dish meals one could prepare! My favorite is soup. Just dump some chicken bones, shredded chicken, corn, carrots, potatoes, onions and maybe some peas and boil them. You can also add any left-over vegetables you may have into the soup. There you have it! A simple soup full of vege goodness! If you want something more, add a few slices of cheese to the soup to make sauce. In this case, chunky sauce. Boil some spaghetti and you have a wonderful pasta meal!

yep... you can have it with or without rice. Sometimes I will crush a packet of instant noodles and add it in to make something like chicken noodle soup! it is nutritious and delicious! Try it sometime. Easy to prepare, fast to cook as well!

so your soup is one dish on its own? interesting. I guess even without a staple (like rice), the starch bit is made up by the potatoes... yah... pasta is almost like a one dish though the boiling of pasta requires another pot! guess my cabbage rice also requires two cooking pots. one pot is the best, wash less. heh.

I like chili. It's simple, easy to make, and nutritious. We make it in our crock pot, so we can make it in the morning and then have it for dinner.

I love "one dish meals", they seems so hearty and cozy, and not to mention...easy! Here is one I like. I get frozen shrimp from Trader Joes to make this, and I find couscous is a nice alternative to rice sometimes. Curry Shrimp Couscous 1 onion, chopped 1 yellow bell pepper, chopped 1 Tbsp. olive oil 1 tsp. curry powder 14 oz. can ready to serve chicken broth 12 oz. pkg. frozen peeled cooked shrimp, thawed, tails removed 1 cup frozen peas 6 oz. pkg. couscous In large saucepan saute onion and bell pepper in olive oil until crisp tender. Add broth, curry powder, shrimp, and peas. Bring to boiling, then add couscous and stir well. Cover and remove pan from heat. Let stand 4-6 minutes, covered, until liquid is absorbed and couscous is tender. Stir and serve. 4 servings

thanks for the great recipe! and the great response. Over here we don't eat couscous a lot... its origins are greek right? but I think i can find some in the supermarket if I look in the right ones.

I agree that it's nice sometimes just to cook for yourself. I am a very fussy eater, so when I'm cooking for myself I can do whatever I like without worrying if other people will like it. I like my meat to be really burned and dry, so when I cook for myself, I can leave it in the pan for as long as I like, add whatever seasoning I like, and then put with it whatever vegetables I like... when I am cooking for both myself and my boyfriend it's a different story - we are at complete opposite ends of the scale when it comes to food - he likes his meat done so that it's quite moist, and we don't like the same seasonings - I like it spicy! He also likes cooked vegetables, where I eat all of mine raw... needless to say we usually end up either eating out, or cooking separate dishes! :o)
