fresh salad recipe ideas

I love fresh fruits and vegetables and lately, in an effort to adapt a healthy lifestyle, i've started to bring fresh vegetable salad as my lunch at work. It usually consists of lettuce, red cabbage, tomatoes, carrots, cucumbers and tuna flakes, dressed with vinaigrette. But I'm afraid that I'll grow tired of it sometime soon. Any ideas for a no-cook and no-brainer veggie salad recipe? Today I saw my boss eating a salad made of crab sticks, lettuce and sweet corn kernels. Maybe I'll try that sometime.

I have a great recipe to share with you. This is an incredibly good Greek salad recipe, nice and tangy and even better in the summer when you use fresh vegetables!NGREDIENTS * 1 head romaine lettuce- rinsed, dried and chopped * 1 red onion, thinly sliced * 1 (6 ounce) can pitted black olives * 1 green bell pepper, chopped * 1 red bell pepper, chopped * 2 large tomatoes, chopped * 1 cucumber, sliced * 1 cup crumbled feta cheese * 6 tablespoons olive oil * 1 teaspoon dried oregano * 1 lemon, juiced * ground black pepper to taste DIRECTIONS 1. In a large salad bowl, combine the Romaine, onion, olives, bell peppers, tomatoes, cucumber and cheese. 2. Whisk together the olive oil, oregano, lemon juice and black pepper. Pour dressing over salad, toss and serve.
