does the brand of mayo effect the taste of the sandwhich ?

Yes, the brands taste different. I think that a good quality mayo tastes very different than Miracle whip. The taste depends, too, which type of oil the manufacturer uses and if the eggs that were used are tasty. If I make it it is egg yolks and oil and salt whipped up. Homemade mayo tastes best to me.
