What's a healthy way to eat zuccinni

i love fried zuccinni and i know that's probably why i'm a fat whale, LOL, but maybe if i could find a more healthier way to enjoy it, than that would be GREAT! any ideas?

You can make little zucchini boats....This is the origional recipe I started with , but then I changes the "stuffing around with wahtever I seem to have in the fridge. If I have chicken I add chicken, if I have other veggies, I throw then in too...zucchini seems to play well with most other foods. This is also a great way to use up leftovers. 2 medium zucchini, about 1 pound 2 tablespoons butter 1 clove garlic, minced 2 tablespoons finely chopped onion 2 cups soft bread cubes 1/2 teaspoon poultry seasoning salt and pepper Wash zucchini; cook whole in a small amount of boiling water for about 8 minutes. Drain and cut into halves lengthwise. Scoop out pulp; chop. Melt butter in a heavy skillet, sauté garlic and onion for a minute, or until onion is tender; stir in chopped zucchini pulp, bread cubes, poultry seasoning, salt and pepper. Stuff zucchini with bread mixture. Place zucchini in a greased baking dish and bake at 350° for 20 minutes, or until zucchini is tender.

I like them pan fried as well, but in a little olive oil with other veggies, I don't think theyre too unhealthy so long as You don't eat them all the time. You can also put cougettes (thats zuccini for us Brits) into most italian dishes easily, like bolognease or lasagne. I also like them in casseroles with tomato, onions, mushrooms and cheese (but go easy on the cheese if its for your diet) plus of course any herbs you think appropriate. Personally I use ready mixed provoncal herbs due to the fact that I am lazy.

I love the flavor of zucchini so I usually just boil it or microwave it and then add a little butter and salt. It's the easiest and healthiest way I can think of.

Depending on the size of the zuccini, take one large or 2 smaller zuccinis (even one zuccini and one yellow squash) cut in half, or quarters if it's a large zuccini, long ways. Cut these pieces into 1 inch chunks. Take a small onion and cut it in half and then slice slice it in about 1/4 inch slices. Put them into a pot with about a can of diced or crushed tomatoes and bring to a boil until solid but soft. Add salt and pepper and basil to taste. I have also seen it with potatoes cut into cubes and boiled then put in with the zuccini and tomatoes.

You could try stuffed zuccinnis you do it the same way you do stuffed peppers but used zuccini instead of green peppers.

I used to hate zucchini because my Mom made most vegetables mushy. I chop it up in slices or wedges and just stir fry it with olive oil in the pan (just like a table soon or two - only enough to coat a bit) and then add salt and pepper while you toast it up a bit, stirring regularly for no more than 5 minutes, prob less. No boiling. Makes 'em simple, crisp and tasty.
