Please share you fav. casserole recipes with me. Mom's idea, or your own. Maybe it was dad? Make it good folks. Yum!

I will post my fav. casserole, it are made with lefttover beef or other meat roast and mashed potatoes. xD very very good!
2 cups sliced onions
1 teaspoon sugar
1 tablespoon butter
3 cups seasoned mashed potatoes
8 slices pot roast, roast beef, pork roast, or meatloaf
1 cup frozen peas, thawed
1 can beef gravy, about 10 1/2 ounces, or 1 cup leftover gravy
1/4 cup shredded mild cheddar cheese
Put onions in a hot dry non-stick skillet. Sprinkle with sugar and fry over medium heat, stirring, until onions begin to brown. Add butter and cook until onions are tender, about 7 minutes. Remove from heat. Spread half of the mashed potaoes into a greased, 2-quart shallow baking dish. Arrange slices of meat on top, then onions, peas, and gravy. Cover with remaining mashed potatoes. Bake at 375ยบ for 30 minutes; top with shredded cheese and bake 10 minutes longer, or until casserole is browned and cheese is melted

Hmmm.. that do sound yummy! I`ll have to try that one day! I was actually looking for something to have for supper today.. but I think I`ll try this recipe tomorrow..;hope its as good as it sounds!

I love making breakfast cassaroles. I usually consider this recipe a "base" and will often add cooked sausage, bacon, or ham....whichever I have. I've even added cooked chicken or steak if it's left over.
Breakfast Cassarole
16 slices white bread
1 pound cheddar cheese, sharp, shredded
2 teaspoons dry mustard
2 teaspoons salt
1 teaspoon pepper
1 small can green chiles, chopped, 4 ounces
4 cups milk
6 eggs
Preheat oven to 350 degrees. Trim bread; cut into cubes. In a 3-quart baking dish, put in half the bread cubes, cheeses, dry mustard, salt , pepper, and green chilies. Repeat a second layer. Pour beaten eggs and milk over the layers.
Cover and refrigerate for at least 1 hour or overnight. Bake (uncovered) in a 350 degree oven for 30 to 40 minutes or until bubbly and slightly brown on top.
