I will be posting Indian Recipes that I tried and worked for me. I invite others interested in cooking to post recipes that they have tried and liked.Happy Cooking

Dear Amma,
I tried this manga pattani recipe...Tasted like what we get in the beach...
Ingredients:
Pattani [White PEas]
Coconut
Red dry chilli
Raw Mango Pieces
Finely chopped onions & green chillies
Ginger
grated carrot
cinnamon stick
lemon juice
Oil
Salt to taste
Mustard seeds
1. Grind coconut, red chillies, cinnamon stick and ginger to a fine paste
2. Cook white peas in Pressure cooker
3. Heat oil, add mustard seeds.
4. After it splutters, add cooked peas
5.Add the ground paste and cook for a minute or two
6. Add chopped mangoes, onions, green chilli, grated coconut and carrots. [I added onions first and then followed it with other ingredients so that onion can get cooked a lil bit].
7. squueze lemon juice and garnish with corriander leaves.

Roasted Vegetables :-
Ingredients:
2 tablespoons HOT CHOCOLATE MEXICAN SPICE BLEND(recipe follows)
1 yellow pepper, cored and seeded
1 red pepper, cored and seeded
1 large red onion
1 mango, firm but not hard, peeled
1 yellow squash
15 grape tomatoes
1 large portobello mushroom, sliced lengthwise
3/4 cup prepared vinaigrette dressing
Directions:
1. Heat oven to 450°F. Prepare HOT CHOCOLATE MEXICAN
SPICE BLEND; set aside.
2. Cut yellow pepper, red pepper, onion, mango, yellow squash and zucchini into 1-inch pieces. Place in large bowl. Add tomatoes and mushroom.
3. Pour vinaigrette dressing and spice mix over vegetables; toss.
4. Spread vegetables in shallow baking pan. Bake 20 to 30 minutes or until vegetables are fork tender. 6 servings.
