I agree with you, I cannot stand over cooked steak, it just seems to lose all of it's flavour and it's like trying to chew leather.
I have to have my steak cooked medium rare, I like to see some blood but don't like blood oozing out.
I usually pan fry my steak on a high temperature on the top of the stove. I find it turns out just the way I like it cooking it that way.

Well done for me! I don't mind blood, but I can't stand if my steak is that squishy texture that it has if it's anything less than well done!
Of course, I like lots of sauce on my steaks, so I guess the "moisture" doesn't mean as much to me as it does to you.

I don't know the technical term for it, but I like it so it is cooked, with no blood actually dripping out of it, and with a little bit of pink to it still. I try not to use too much sauce to it, as it destroys the flavour.
