Vegetarian Cooking & Freezing Ideas?

My teenage daughter has become a vegetarian. Does anyone have some good recipes that I can cook & freeze? My thought is it would be nice to make serving size portions that she can pull out of the freezer.

Stir-fried dishes are always nice, and pretty easy. Just mix a bunch of vegetables, soy-sauce and tofu squares (if she likes them) in a pan, add some other spices you might have on hand, garlic, and ginger, mainly.
cook rice and freeze either together or seperately for her. Easy!

hi catherIN, my friend, i am a vegetarian and i am writing down a recipe which i think you and you daughter will like to eat. it is easy to cook. it is pasta with mushroom and all that stuff.
400 gm of pasta
500 gm of mushroom
30 gr soy non-hydrogenated vegan migraine
2 tbsp olive oil
black pepper
cook pasta. saute mushroom in soy margraine , oil, black pepper and salt.
toss with cooked pasta.
done.
