Thank you, I hope you find it another helpful hint to saving some money and there are a couple of great ideas above too.
Good work noticing the 7s, yes I am hooked on those weekend lol.

Yes, it works for me, too! I also drop in carrots that are past their prime (read: floppy), cauliflower, broccoli, and so on. If you have pickled beet vinegar left over, pickle boiled eggs in it. After a week or so, they're really good. (And a pretty pink.)

Trust me, when you have as many onion chomping guests and family as I do, you certainly CAN cut too many! I reek of the things some days.
I agree never throw vinegar away though. I love vinegar itself and if I do treat myself to chips I have to have vinegar.
I took the advice above and I have lots of other things slung into vinegar now :-)
