Don't throw away the vinegar when the pickle jar is empty

Chopped too much onion? Never fear, if you have emptied the beetroot or pickles and the vinegar is still in the jar you can pop the chopped onion in there and it will stay fresh and tasty until you are ready to use it. Works for me, anyways :-)

Yes, it works for me, too! I also drop in carrots that are past their prime (read: floppy), cauliflower, broccoli, and so on. If you have pickled beet vinegar left over, pickle boiled eggs in it. After a week or so, they're really good. (And a pretty pink.)

Thank you for all those extra ideas! I have never tried that with broccoli before so I may very well drop some of that in as well next time :-)

Clever, but how can you ever cut too many onions, I love them. ha-ha. Home-made pickled onion vinigar made with brown vinigar on chips is one of the best things I remember from being a kid - noting like it! We never threw vinigar away, lol.

Trust me, when you have as many onion chomping guests and family as I do, you certainly CAN cut too many! I reek of the things some days. I agree never throw vinegar away though. I love vinegar itself and if I do treat myself to chips I have to have vinegar. I took the advice above and I have lots of other things slung into vinegar now :-)
